Reports to : Restaurant Manager / Director of Operations
Pay Status : Full time; Hourly pay rate
Objective : To run a successful, profitable restaurant operation while upholding Subway, DSI and Board of Health standards in the manager’s absence.
POSITION PURPOSE :
Uphold and enforce Subway standards as well as DSI policies / procedures ; maintain operational excellence; follow-up training and further development of staff; supportive of market business plans; understanding of restaurant’s financial performance.

Meet or exceed budgeted sales goals through :Performing and training exceptional guest serviceKeeping a clean, bright store – manage through cleaning listServing the highest quality product :Ensure all products meet food safety specificationsEnsure all incoming product is to Subway specificationsEnsure all product preparation is to specificationsEnsure sandwich and salad preparation is to specificationsWorking with advertising and marketing representatives on LSMOperations
Manage the restaurant with the Subway Operations Manual as guidelineUtilize all charts that are in placeControl all costs through daily / weekly paperwork and tracking sheetsAttend mandatory staff meetings to keep all employees informed and involvedWork varied shifts to have a complete understanding of your restaurant and to improve daily operationsEnsure all files are complete and up-to-date, and confidentiality is maintainedTeach preventive maintenance and ensure all equipment is in good working conditionPerform banking duties in manager’s absence or upon request by Manager or Supervisor :Must provide your own motor vehicle transportationMust provide proof of current motor vehicle insuranceMust possess current valid Arizona driver’s licenseCheck restaurant mail box in manager’s absence or upon request by Manager or SupervisorAbility to use POS cash register system, bread oven, manual tomato and vegetable slicers, knives, mop and mop bucket / wringer combinationPersonnel
Staff restaurant properly to provide excellent guest serviceUnderstanding of hiring employees that meet DSI guidelinesKnowledge of DSI new hire orientation policy and time record proceduresTrain all employees to DSI guidelines and expectations; continuous follow-upProvide feedback to Restaurant Manager for employee performance evaluations and / or wage reviewsParticipate with Restaurant Manager in the appropriate discipline of employees, being consistent and using DSI guidelinesSupport and enforce all Subway and DSI policies / proceduresPREREQUISITES :
Food safety training and ServSafe certification (if applicable)University of Subway certificationManagement training and certification as required by DSI and Subway CorporateMust work shifts opposite Restaurant ManagerFrequent to continuous standing, bending, walking, carrying – climbing on occasionAbility to lift a minimum of 10 pounds regularly and up to 50 pounds occasionallyRegular and predictable attendance is essentialAssume the position of Restaurant Manager as requiredWe use eVerify to confirm U.S. Employment eligibility.
