Burial Beer Co is looking for a Kitchen Manager to lead our Back of House team at the Charlotte Taproom. This person will oversee the daily operations of our Taproom kitchen including food preparation, ordering supplies, scheduling shifts, and monitoring inventory levels. The House of Relics is the center of the Burial experience in Charlotte showcasing a space that pays homage to the history of the property and its location in the historic Plaza Midwood neighborhood.

The Job

Burial Beer Co. is looking for a Kitchen Manager to join our team. This position will oversee the daily operations of our Taproom kitchen including food preparation, ordering supplies, scheduling shifts, budget and cost management and monitoring inventory levels. This position would be someone with proven culinary and management experience. In addition to being an excellent communicator, this candidate should also demonstrate outstanding leadership and organizational abilities. The ability to work as a part of a team professionally and respectfully is essential.

What You’ll Do

  • Build a menu in coordination with brand vision, event needs and customer expectations utilizing company-wide offerings and ordering guides
  • Oversee and manage financial standards and goals for the kitchen - 30% COG weekly budget; 5% non-food expenses weekly budget
  • Manage inventory and an ordering schedule that ensures that budget limitations do not impact weekend high volume times.
  • Meet weekly with Taproom Managers to go over budget and ensure that food COGs, non-food expenses and payroll are being managed within financial goals for the venue.
  • Oversee the maintenance and upkeep of kitchen equipment and space
  • Ensure that the kitchen operations are in compliance with the Health Department
  • Manage all HR related admin for the Charlotte Taproom kitchen – including payroll, scheduling, hiring / terminations, and disciplinary action.
  • Manage all administrative needs for the Charlotte Taproom kitchen – including expense reports; supply ordering and monthly inventory management
  • Develop, communicate, implement and refine SOPs to optimize on site safety and cleanliness, the guest experience, quality standards, staff performance and accountability
  • Manage communications with BOH and FOH staff related to changes, menu updates, new
  • Train staff on food safety, menu execution, cleanliness standards and service standards
  • Maintain relationships with vendors
  • Execute service independently and alongside the team via prep / dish / cook work and being on call to cover sick days / PTO

Requirements :

Who We’re Looking For

  • 3+ years experience in a similar position
  • 21 years of age or older
  • In depth knowledge of kitchen health and safety regulations
  • Excellent problem-solving and conflict management abilities
  • Good communication and organizational skills
  • Attention to detail
  • Must have open availability
  • Physical Requirements

  • Must be able to stand for long periods of time
  • Ability to work well in small spaces and a fast-paced environment
  • Ability to lift at least 20lbs
  • Bend or twist body regularly

  • Job Schedule : work schedule varies
  • Current Taproom Hours : Mon & Tues 1pm-10pm, Wed & Thurs 1pm-11pm, Fri & Sat 12pm-12am, Sun 12pm-9pm
