Responsibilities :
Lead and manage all Galley staff while overseeing the operation of all galleys and food outlets.
Coordinate food offerings, including group needs and special requests.
Ensure the proper preparation of special dietary meals, accommodating food allergies for both Guests and Crew.
Monitor all culinary standards, inventory, and cost control measures.
Conduct random food and menu audits to ensure quality.
Maintain a strong relationship with the shore-side Food & Beverage management team.
Ensure compliance with Disney Cruise Line and USPH sanitation requirements in all galleys and food storerooms.
Set departmental goals and objectives.
Maintain operating guidelines and On-the-Job training materials for your areas of responsibility, updating as necessary.
Ensure all facilities and equipment are well-maintained and in working order.
Handle inventory control, including managing par levels, turnover, and replenishment.
Oversee garbage separation and disposal procedures.
Monitor the handling, maintenance, and reordering of operational equipment.
Ensure proper use and storage of hazardous materials in accordance with safety regulations, including regular inventory and MSDS availability.
Facilitate department meetings to promote collaboration and team spirit.
Provide leadership to all direct reports, including : Managing personnel files, reviewing and approving renewal contracts, conducting performance reviews, ensuring compliance with Project Onboard, monitoring STAR, facilitating onboarding and ongoing training, and succession planning.
Recognize and celebrate Crew contributions and maintain effective communication.
Basic Qualifications :
Minimum five years of experience in a high-volume galley / Food & Beverage operation.
Certified Executive Chef or equivalent degree in Culinary Arts.
Preferred college education or equivalent industry experience.
Ship experience is required.
In-depth knowledge of food and beverage products, services, and equipment.
Ability to calculate cost projections and understand budget impact.
Technical and functional understanding of ship-based food and beverage operations.
Excellent verbal and written communication skills.
Strong interpersonal communication abilities.
Proficient in Microsoft Office and Outlook.

This role is SHIPBOARD .
To be eligible, you must :
Be genuinely interested in pursuing a career at sea and willing to live and work onboard a Disney Cruise Line vessel.
Be prepared to follow and perform safety roles, emergency responsibilities, and other related duties as per the ship's Assembly Plan.
Be willing to uphold general safety management responsibilities as outlined in the Safety Management System for areas and operations you supervise.
If applicable, be open to sharing a confined cabin with fellow crew members, and appreciate working and living in a multicultural environment with established rules and regulations.
Your Responsibilities :
Have a valid passport and C1 / D Seaman's visa (DCL will assist you with obtaining these documents).
Complete a pre-employment medical examination.
Obtain a criminal background check.
Provide your own approved work shoes.
Disney Cruise Line is a drug-free workplace. All new hires must undergo drug and alcohol testing within the first week onboard and throughout their contracts. Failing to pass this testing will result in immediate termination.
