Assist the Executive and Sous Chef with the orderly storage and cleanliness of all areas and items within the kitchen, including the cleaning of all pans, utensils and dishes by hand or while operating a commercial dishwasher. The Dishwasher and Prep Trainee will gain exposure to and experience in the preparation of restaurant quality food and commercial sanitation in a fast-paced culinary environment.

Essential Duties
Maintain orderly storage and sanitary conditions in all areas and of items in the kitchen, dining room, and refuse disposal areas.
Correctly and appropriately utilize cleaning agents in all food preparation areas.
Utilize appropriate care, cleanliness, and safety of all kitchen equipment, demonstrating the safe and efficient operation of a commercial dishwasher, outdoor grill, and other equipment.
Hand wash pans and cooking utensils properly.
Collect, load, unload, and store utensils, pots, pans, dishes and glassware safely and in an organized manner.
Check and complete temperature charts for refrigerators and freezers daily.
Inventory food service items and supplies accurately.
Able to or willing to learn to wash, chop, dice, and julienne food items; assist in other food and snack preparation
Keep the work area clean and in sanitary condition at all times and before going off duty.
Wash hands frequently throughout the day and before preparing food.
Retrieve food or other kitchen supplies from the storeroom, freezer, and refrigerator using appropriate body mechanics.
Obey safety regulations, policies and procedures. Report any faulty equipment or unsafe conditions to a Supervisor.
Prioritize food, patient, and employee safety at all times.
Attend department and organizational meetings and in-services.
Conform to uniform, personal hygiene, PPE, and good grooming standards, including, but not limited to : wear a hairnet, a beard net, a clean uniform, and present a groomed and neat appearance with clean hands and short, clean fingernails.
Attendance as scheduled is an essential duty of the position.

Qualifications
High school diploma or GED; work experience may substitute for educational requirements.
Ability to obtain and maintain a food handler certification card.
Working knowledge of sanitation procedures.
Commercial kitchen experience preferred.
Licensure / Certification

Work Environment : Position is required to work in a temperature- controlled environment; 80% - 90% or more time spent indoors.The noise level in the work environment is usually moderate. This position may operate the telephone system and / or 2-way radio, storage and sanitation equipment, steam kettles, knives and other prep cutting equipment, cleaning materials. May be exposed to high heat, steam, or cold temperatures.
Physical Demands : While performing the duties of this position, the employee is regularly required to hear and comprehend basic instructions in English. Must be able to stand throughout shift, bend, climb, reach, stoop, and move quickly. Must be able to frequently lift up to 25 lb dish trays, occasionally lifting other items up to 50 pounds . The employee frequently is required to use hands to finger, handle or feel objects, tools or controls. The employee is required to stand, reach with hands and arms 80-90% of shift. The employee is required to occasionally; walk; sit; climb or balance; and stoop, kneel, crouch or crawl. Specific vision abilities required by this position include close vision, distance vision, color vision, peripheral vision and the ability to adjust focus. Must hear, understand, and respond to basic verbal instructions.
