Chef de Cuisine
A well-established, high-volume Italian restaurant in New York City is seeking a talented and passionate Chef de Cuisine to lead its kitchen operations. The ideal candidate has a strong culinary background in authentic Italian and Mediterranean cuisine, a hands-on leadership style, and the ability to inspire and manage a dedicated culinary team while maintaining the highest standards of quality and consistency.
Responsibilities :
Oversee all kitchen operations, ensuring excellence in food preparation, presentation, and consistency.
Lead, train, and mentor the culinary team to uphold quality standards and promote a positive kitchen culture.
Collaborate with ownership and executive leadership on menu development, seasonal updates, and special events.
Manage food costs, labor budgets, and inventory to meet financial goals.
Maintain strict adherence to health, safety, and sanitation regulations.
Ensure all dishes are executed to recipe specifications and align with the restaurant’s concept and culinary vision.
Supervise daily prep, production, and service to ensure smooth operations across all stations.
Work closely with front-of-house leadership to ensure seamless coordination between kitchen and service teams.
Recruit, train, and evaluate kitchen staff, fostering growth and accountability.
Stay current with culinary trends and continuously elevate the guest dining experience.
Qualifications :
5+ years of progressive kitchen leadership experience, with at least 2 years as a Sous Chef or Chef de Cuisine in a high-volume, upscale Italian or Mediterranean restaurant.
Exceptional culinary and knife skills with deep knowledge of Italian cuisine and seasonal ingredients.
Strong leadership, communication, and organizational skills.
Proven ability to manage costs, ordering, and vendor relationships effectively.
Ability to thrive under pressure in a busy, open-kitchen environment.
Flexible schedule, including nights, weekends, and holidays.
