This role blends creativity with operational rigordelivering a distinctive, locally inspired culinary experience aligned with Marriott Tribute Portfolio standards while maintaining tight cost controls, safety compliance, and team development. Bottom line: exceptional food, executed consistently, profitably, and safely.Key ResponsibilitiesCulinary Vision & Brand AlignmentOwn the culinary identity of the hotel, ensuring menus reflect Tribute Portfolios lifestyle positioning and the San Antonio Riverwalk market.Design, test, and launch menus for all outlets (restaurant, bar/lounge, rooftop as applicable, banquets, in-room dining/market), balancing creativity with operational feasibility.Lead menu engineering, seasonal refreshes, and local sourcing initiatives that enhance guest appeal and profitability.Kitchen Operations & ExecutionOversee daily kitchen operations across all outlets and events, ensuring consistency in taste, presentation, portioning, and timing.Establish and enforce standardized recipes, prep systems, plating guides, and production schedules.Partner with the F&B Director on outlet pacing, service flow, and event execution standards.Financial Performance & Cost ControlOwn culinary-related financial performance, including food cost, labor deployment within the kitchen, waste reduction, and purchasing discipline.Manage inventory controls, par levels, yield management, and vendor pricing to protect margins without compromising quality.Leadership, Staffing & TrainingRecruit, train, schedule, and lead all culinary team members (Sous Chefs, Line Cooks, Prep, Stewards, etc.).Build a strong bench through coaching, performance management, and internal development.Set clear expectations around professionalism, cleanliness, teamwork, and accountability.Food Safety, Sanitation & ComplianceEnsure full compliance with local health department regulations, ServSafe standards, OSHA guidelines, and Marriott food safety requirements.Maintain audit-ready kitchens at all times; lead corrective actions immediately following inspections or internal audits.Banquets, Catering & EventsLead culinary execution for all banquet and catering events, ensuring BEO accuracy, production timelines, and guest satisfaction.Collaborate with Sales and Events teams on menu development, tastings, pricing, and event customization.Maintain consistency and quality during high-volume group business and peak demand periods.Cross-Functional CollaborationPartner with Purchasing/Vendors to ensure quality, consistency, and contract compliance.Coordinate with Engineering on preventative maintenance, equipment needs, and kitchen layout efficiency.Pre-Requisite Experience & QualificationsMinimum 57 years progressive culinary leadership experience in full-service hotels, lifestyle hotels, or upscale restaurants.Prior experience as an Executive Chef or Executive Sous Chef with multi-outlet and banquet oversight strongly preferred.ServSafe Manager Certification required (or ability to obtain immediately).Strong understanding of Texas food safety and workplace regulations.Flexible availability, including early mornings, evenings, weekends, and holidays.Aztec Hotel San Antonio is an Equal Opportunity Employer.
