Position Overview
We’re seeking a skilled Garde Manger with a refined understanding of French cuisine and an eye for detail in cold preparations, composed salads, and plated presentations. This role focuses on executing Café Stella’s signature starters and accompaniments—think oysters, tartares, pâtés, seasonal salads, and housemade dressings—prepared with precision, elegance, and consistency.
The ideal candidate has experience working in elevated, high-volume kitchens and understands how to balance flavor, texture, and visual composition in every dish. A deep respect for classical technique and impeccable organization is essential.
Key Responsibilities
Prepare and plate cold menu items including salads, tartares, charcuterie, and cold seafood dishes according to Café Stella’s French standards
Maintain mise en place for all garde manger components and support other stations during service as needed
Ensure precision, balance, and presentation in every dish served
Oversee the freshness and quality of all cold station ingredients and garnishes
Adhere to food safety, hygiene, and storage best practices at all times
Collaborate with the kitchen team to maintain flow and communication throughout service
Participate in daily prep, service setup, and closing duties including cleaning and restocking
Uphold a calm, efficient, and professional demeanor during busy hours
Qualifications
Minimum 2 years’ experience in an upscale, high-volume restaurant, preferably French or European cuisine
Strong knife skills and proficiency in cold preparations, emulsions, dressings, and composed plating
Keen eye for aesthetics, detail, and consistency
Excellent organizational habits and time management
Positive attitude and team-first approach
Food Handler Certification (required by start date)
Culinary school training a plus but not required
