Job Summary

Under general supervision, plan, direct, and coordinate activities of an organization or department that serves food and beverages. Oversees the work of team members who prepare food, serve and clean-up in the cafeteria, production, storeroom, tray line and related areas. Oversees the process for stocking of food items. Communicates and implements HACCP guidelines. Complies with regulatory agency requirements.

Essential Functions :

• Operations Management

Oversee the operations of Food Services including but not limited to : assisting in establishing standards for personnel performance and customer service; coordinating assignments of cooking personnel to ensure economical use of food and timely preparation; scheduling use of facilities or catering services for events such as banquets or receptions, and negotiate details of arrangements with clients. Resolve customer complaints or problems (30%)

Monitor food preparation methods, portion sizes, and garnishing and presentation of food to ensure that food is prepared and presented in an acceptable manner. (30%)

Monitor compliance with health and fire regulations regarding food preparation and serving, and building maintenance in dining facilities. Keep records required by government agencies regarding sanitation or food subsidies. (20%)

Oversee the management of food supplies and equipment including but not limited to : ordering and purchasing equipment and supplies; arranging for equipment maintenance and repairs, and coordinate a variety of services, such as waste removal and pest control. Maintain food and equipment inventories, and keep inventory records. (10%)

Assist in assessing staffing needs, recruiting, mentoring and monitoring the performance of staff. (10%)
