James Beard Semi-finalist in the heart of Corktown is seeking a Lead Line Cook ready to further his / her culinary skillset with a menu inspired by ingredients sourced from hills, fields, rivers, and streams; be it fresh farmed, preserved, or cured. The role requires energetic candidates with a strong sense of teamwork, passion, and teamwork to work alongside the kitchen team to delvier the ultimate culinary experience for our guests.
- Participate in, and achieve, Alpino’s end goal of serving guests in a highly hospitable, creative, and consistent manner.
- Execute daily production list and be sure to sign off for the completion of each assigned task.
- Report to your supervisor when anything is running low in inventory, both prepped items or raw product.
- Check workstation periodically throughout the shift to ensure compliance with health and safety protocols is upheld.
- Follow all recipes and practice portion control standards set by the chef.
- Maintain a philosophy of cleaning-as-you-go and maintain organization at all times. mise en place !
- If you are asked to put away an order with Chef, practice proper receiving protocols to ensure product freshness, quality, and quantity. If it seems questionable, inform Management / Chef.
- Help control food costs by monitoring portion control and waste through effective production practices.
- Ask questions when you are unsure, be sure to speak up when you aren’t clear on what to do at any given point.
