Job Description
STATEMENT OF JOB :
The Dining Services Supervisor oversees all aspects of food service for residents, staff, and guests. The Dining Services Supervisor assists in hiring, training, supervising, and evaluating all food service staff. Prepares meals according to approved menus and recipes and takes into account special dietary needs of the residents. In the absence of the Dining Services Director, supervises dietary staff to assure efficient operation of the kitchen at all times.
Responsibilities include but are not limited to :
Policies / Procedures / Administration
Maintains a working knowledge of all policies and procedures pertaining to the position, the department, and the personnelSupervises dining staff to ensure proper preparation of food in compliance with policies, and to ensure proper use of raw food and suppliesEnsures that the food service area and all equipment exceeds sanitation requirements set forth by federal, state, and local health regulations and meets the community standardsMaintains quality standards and stays within budget for food / supply costsPrepares and presents menu items according to standard recipesMaintains clean and orderly work area at all times, including floors / prep areasParticipates in weekly cleaning routines planned by Dining Services DirectorReports faulty equipment, broken or chipped glassware, broken or chipped food trays, etc. to supervisor. Removes from service any items that may be potentially dangerous to a resident or employeeReports incorrect refrigerator and freezer temperatures to supervisor immediately. Must be recorded 2 times / dailyMakes sure all leftovers are properly cooled, stored, identified, and datedObserves good safety practicesPays special attention to portion controlRemoves frozen food items from freezer for next day (or meal) preparation, and begins prep for next day mealMakes appropriate menu substitutions when certain food items are not available when approved by Dining Services DirectorResponsible for supervising assigned duties to prepare kitchen for each meal being servedResponsible for supervising assigned duties to prepare kitchen for next day meal when working evening shiftResponsible for taking and recording food temps three (3) times dailyAttends staff meetings and in-services as requiredPerforms all other duties as assignedRequirement
Residents :
Will develop a good working knowledge of specific requests and diets of each resident. Must be alert to changes as well as likes and dislikesMust be courteous and polite to all residents, visitors, and staffFollows confidentiality policies regarding release of resident informationStaff :
Supervises dining staff in the absence of the Dining Services DirectorAssists in training new dining employeesConducts in-service training at the direction of the Dining Services DirectorRequirements :
Must be Serv-Safe certified, or be willing to become certified within 60 days of hiringMust have dining services experience in a management or leadership capacityMust have a working knowledge of ordering, storing, preparing and serving in a food service environment, preferably in a senior living communityMust possess the ability to read, write, and make simple calculations. Must be a quick learner and be able to effectively apply principles learnedMust be able to follow verbal and written instructionsMust be able to stand for long periods of time and withstand temperature extremes, wet and / or humid conditions and noiseMust be able to lift 50 lbs on a regular basis or at least eight (8) times per shiftMust be able to carry, pull or push heavy objects up to 20 feetMust be organized, and able to work well with others as part of a teamMust be in a designated uniform during working hours and maintain good personal hygiene and neat public appearanceMust be willing to work a flexible schedule to include evenings, weekends, and holidays
