Requirements

Required Qualifications:
1.Ability to communicate effectively with Guests, Team Members and Management in both written and verbal form.
(1) year as an Executive Chef and/or two (2) years as a unit assistant general manager having full P&L responsibility.
possess and demonstrate great attention to detail in order to maintain appearance and operating standards of all units.
demonstrate sound judgement and maturity in decision-making abilities, even when dealing with difficult situations.
5.Comprehensive food knowledge required, which includes profit and loss statements, cost control, menu planning, budgeting, training, inventory control and sanitation.
6.Ability to work a flexible schedule.

Physical Requirements:
1.Requires normal, corrective vision range, the ability to see color and the ability to distinguish letters,numbers and symbols.
be capable of lifting up to 50 pounds, push 150 to 250 pounds on a pushcart, in/out of walk-ins of-10 degrees to 140 degrees with or without assistance.
3.Requires the physical ability to stand or sit for long periods of time, walk frequently, bend or reach to aheight of 6 feet with or without assistance.

The Executive Chef will be responsible for menu planning, food preparation, back of the house management, and cost management for all of Graton Resort Casino's managed outlets. In addition to daily back of house management, the Executive Chef will work as part of the management team to build sales and grow the business. This position also oversees department hiring, and training of new Team Members. Essential Functions:
1.Responsible for practicing, supporting and promoting Graton Resort & Casino's core values and demonstrating Exemplary Service Standards at all times.2.Effectively directs the planning, design, coordination and organizational phases of all food production for restaurants' operations.3.Effectively communicates with department heads in the food services, beverage and related support and operating departments.4.Ensures food quality and food safety measures are executed while maintaining food costs at targeted levels.5.Oversees department selection, hiring, training, standards and procedures, evaluating and scheduling processes.
6.Continually evaluates and documents the performance of all culinary positions.
7.Oversees and operates capital budgeting process including day-to-day forecasting of revenue, associated labor, and operating costs. Uses P&L as a tool to maintain proper costs and revenue levels.
8.Effectively handles guest recovery and Team Member issues with appropriate documentation and follow-up.
9.Continually evaluates equipment, stock levels, labor, and business volume forecasting taking appropriate actions to ensure all areas are prepared and in working order.
10.Ensures the culinary management team is properly trained and developed. Establishes presentation techniques and quality standards.
11.Demonstrates a comprehensive knowledge of products offered including wine and spirits, food recipes, prices, presentation, internal control procedures and all Company, as well as department, policies.
12.Ensures all operations follow safety and health guidelines in accordance with all public health and sanitation regulations.
