Fresh Baguette is a fast-growing, artisanal bakery known for its high-quality standards and modern atmosphere. The company was founded in Bethesda, MD in 2013, to bring fresh, made-from-scratch organic breads, pastries, sweets, and croissant items inspired by bakeries in France to the DMV area. We have expanded to eight retail locations, two production bakeries, and a thriving wholesale business. We serve coffee shops, restaurants, hotels, and grocery stores with fresh products every day, 365 days a year.

We're excited to announce that the Quality Assurance team is expanding. We are looking for a Quality Control Technician to assist the Quality Assurance Manager in ensuring Fresh Baguette remains a safe environment for our employees and customers.

Quality Control Technician

About the Role

The Quality Control Technician ensures that all bakery products meet the companys food safety and quality standards. This role supports daily production by monitoring critical control points, performing product inspections, maintaining documentation, and helping drive continuous improvement in quality and consistency. The QC Technician assists in maintaining compliance with local health, FDA, and SQF requirements.

As a Quality Control Technician You Will

  • Make sure food safety rules and Good Manufacturing Practices (GMPs) are followed at all times.
  • Perform daily walk-throughs of the production centers to make sure quality and food safety standards are met.
  • Conduct visual and physical inspections (appearance, weight, labeling, packaging, etc.) of in-process and finished products to ensure they meet quality standards.
  • Verify metal detector, temperature, and other critical control checks as defined in the HACCP plan.
  • Complete and record checks for Critical Control Points (CCPs) as required by HACCP plans.
  • Review quality results regularly to spot trends or issues and report to the QA Manager.
  • Communicate findings to QA Manager, and assist with corrective and preventive actions.
  • Follow up with departments to ensure timely and effective closure of corrective actions or non-conformities.
  • Collect samples for microbiological, allergen, and shelf-life testing.
  • Help fix and prevent food safety and quality problems by working closely with production and retail teams
  • Ensure cleaning and sanitation procedures (SSOPs) are being followed properly.
  • Support the QA Manager with investigations, updates to procedures, and improvement projects.
  • Assist during internal and external audits and help keep the facility audit-ready
  • Conduct inbound raw material and packaging inspections and monitor supplier quality compliance.
  • Review, investigate and analyze customer or supplier performance feedback to determine root cause analyses and appropriate corrective actions.
  • Assist QA team and conduct internal inspections to ensure food safety and product quality consistency in bakeries.
  • Assist in staff training on equipment calibration and quality assurance procedures.
  • Assist the QA Manager with updating manuals, reports, and special projects.

  • Full-time, 5 days per week
  • Standard hours : 7 : 00 AM 4 : 00 PM
  • Flexibility is required you may need to start earlier or stay later based on business needs (e.g., emergencies, inspections, special projects, etc.)
  • The work week includes both weekdays and weekends ; availability to work on any day of the week is required
  • What We're Looking For

  • 23 years of experience in Quality Control within a food manufacturing environment (training available for entry-level candidates).
  • Knowledge of HACCP, GMPs, and food safety regulations.
  • Familiarity with FSMA and FDA regulations, cleaning and sanitation, and pest control practices.
  • Strong communication skills (verbal and written) and attention to detail.
  • Good communication and interpersonal skills to collaborate effectively with cross-functional teams.
  • Ability to work with computers and technology efficiently. Proficient in Microsoft Office (Word, Excel, Outlook) and basic documentation management.
  • Physically capable of standing for long periods, lifting up to 50lbs, and moving throughout all areas of the facility.
  • Able to work flexible hours and support QA team as needed.
  • Solid understanding of a production or manufacturing environment.

  • Requirements

  • Authorization to work in the U.S. without sponsorship
  • High school diploma or equivalent; some college or technical training preferred.
  • Open availability to work a variety of shifts, including weekends & mornings, afternoons, evenings
  • Valid Driver's License and reliable vehicle to travel between locations

  • We have commissary bakeries in Rockville, MD and Germantown, MD
  • We have 8 retail bakery cafes throughout DC, MD, and VA
  • Work Environment

  • Our retail locations are small bakery cafes
  • Our commissary bakeries are large-scale, industrial production settings with :
  • Industrial machinery and loud noise from mixers, sheeters, and ovens

  • Hot and cold temperatures from ovens, proofers, and walk-in refrigerators
  • A clean, production-focused environment designed for efficiency and high-volume baking
  • An attached warehouse area used for packaging, storage, and distribution of baked goods
