Essential Job Responsibilities
- Prepare food daily, as outlined on the weekly menu plan.
- Alter or adapt recipes to accommodate special dining needs of residents or to improve recipes. Recipes should be prepared with little or no added sodium (salt).
- Monitor or portion control to meet residents’ requests and meet basic nutritional requirements.
- Coordinate and participate in serving food.
- Ensure attractive presentation of food on the plate before serving.
- Maintain portion control to meet budgetary requirements.
- Train, supervise and assign work to Dining Aides.
- Assist with menu planning. Review and adjust menus with supervisor to accommodate foods in season, vendor sale prices, special events and holidays.
- Identify food and supplies needed for the next week’s menus and report to the supervisor.
- Maintain a clean, orderly and safe kitchen environment.
- Ensure proper handling, labeling and storage of food for infection control.
- Prepare meats for storage and portion control upon delivery. Ensure proper storage of all delivered foods and ingredients.
- Maintain a written inventory of dry goods, refrigerated and frozen foods, non-food supplies, dishes and utensils.
- Notify manager of malfunctioning equipment or appliances.
- Ensure compliance with all state, local, and federal regulations.
- Work with a team to ensure efficient operation of the facility.
- Provide input for resident assistance plans.
- Encourage and invite residents to participate in the food service program and activities.
Education and Experience Required
High school diploma or GEDExperience with commercial cooking or domestic cooking with large groupsKnowledge, Skills, and Abilities Required
Practice safety in working with and around kitchen equipment.Promote teamwork in providing services to residents.State food-handling and kitchen regulationsOperation of kitchen appliances (dishwasher, garbage disposal, microwave, coffee maker, ice machine, blender, food processor, meat slicer, mixer, etc.) and office equipment (photocopier, telephone)Preferred Qualifications
