Overview

Presbyterian is seeking a Cook III

Prepare hot food items for all areas of the department. Prepare food for cold prep grab and go and bulk production retail production and short order grill. Prep food items as needed for menu cycles. May act as charge.

  • Work hours : Varied Days and Hours

Ideal Candidate : Ten or more years experience in high volume preparation and cooking of food in a hotel restaurant cafeteria catering firm government or private institution

Qualifications

  • Ten or more years experience in high volume preparation and cooking of food in a hotel restaurant cafeteria catering firm government or private institution or internal candidate who demonstrates competency in at least four stations in the kitchen.
  • Less than High School.
  • Responsibilities

  • Assists in the preparation of hot food items for all areas as indicated by menu cycles.
  • Responsible for preliminary preparation of food items for next day as indicated by menu cycle.
  • Ability to read production tickets
  • Assists with routine cleaning and sanitation of areas.
  • Assists with serving food items as indicated by established workflow
  • Must demonstrate competency in knife skills
  • Must demonstrate competency in food service safety practices and procedures and temperature control
  • Assists with fruit and vegetable preparation and food portioning and other bulk food preparation
  • Assists with preparing Grab and Go and other retail items
  • Must be proficient in utilization of flat top grill convection oven deep fat fryer quick cook ovens and char broiler.
  • Must be proficient in utilization of additional cooking equipment including slicer standing mixer and combi oven tilt skillet soup kettles
  • Must be proficient in various cooking methods including pan frying sauting deep frying boiling and baking / roasting.
  • Must be proficient in additional cooking methods including grilling / broiling roasting simmering steaming and braising stewing blanching and poaching.
  • Butchering / Meat Fabrication.
