Position Overview :
The Regional Dietician Consultant provides clinical leadership and operational support across multiple skilled nursing and behavioral health facilities to ensure residents receive high-quality nutritional care while supporting cost-effective food service operations. The Regional Dietician Consultant collaborates closely with Dietary Managers to support meal quality, food safety, and staff competency across all facilities. This role provides oversight and consultation on kitchen management, ensuring dietary operations meet regulatory and sanitation standards, and that meal production systems align with approved menus and physician-ordered diets. The Regional Dietician Consultant role also works collaboratively with regional leadership, dietary consultants, facility leadership, dietary managers, and interdisciplinary teams to maintain regulatory compliance, drive best practices, and identify opportunities for operational efficiencies without compromising patient outcomes. - Provide regional oversight and guidance on all aspects of clinical nutrition services in accordance with federal and state regulations, professional standards, and company policies.
- Conduct routine facility visits to assess clinical nutrition practices, food service operations, and kitchen compliance.
- Review and audit resident nutritional care plans and assessments to ensure quality and regulatory compliance.
- Support facilities in survey readiness and actively participate in survey response and follow-up plans related to dietary services.
- Partner with facility dietary managers and Administrators to analyze food service budgets,
- vendor contracts, purchasing trends, and inventory controls to identify cost-saving opportunities.
- Develop and implement strategies to manage food costs and reduce waste while maintaining nutritional quality and resident satisfaction.
- Conduct routine inspections of facility kitchens and food storage areas to ensure compliance with Title 22, CMS, and local health department regulations.
- Review kitchen workflows, meal preparation processes, and serving practices to ensure safety, sanitation, and efficiency.
- Evaluate kitchen staff performance and training needs; assist with competency validation for Dietary Managers, Cooks, and Aides.
- Support the development and implementation of standardized production systems (., menu cycles, texture modifications, special diets).
- Collaborate with Dietary Managers to oversee purchasing practices, vendor relationships, and food cost controls.
- Ensure corrective action plans are developed and implemented for deficiencies noted in internal or external surveys.
- Ensure all facilities maintain compliance with CMS F-Tags (F801–F812) and Title 22 dietary regulations.
- Participate in environmental rounds, QAPI meetings, and kitchen audits as part of ongoing quality assurance.
- Provide consultative support during survey entrance and exit conferences specific to dietary services.
- Provide coaching, training, and ongoing education to facility dietitians, dietary managers, dietary cooks, and dietary aides to ensure consistent practices across facilities.
- Collaborate with clinical and operations leadership to develop and roll out standardized menus, clinical documentation tools, and operational procedures.
- Monitor key performance indicators (KPIs) related to dietary services, including budget compliance, clinical outcomes, survey performance, and resident satisfaction.
- Serve as a subject matter expert and resource for dietary regulatory updates, best practices, and process improvements.
- Verify that menus align with physician-ordered diets and that appropriate substitutions are provided and documented.
- Monitor compliance with diet texture modifications and IDDSI standards.
- Participate in interdisciplinary care plan meetings and resident nutritional risk reviews as needed.
- Participate in company-wide initiatives related to nutrition and food service.

Knowledge, Skills, and Abilities :
In-depth understanding of clinical nutrition principles, therapeutic diets, and nutritional care planning for residents in skilled nursing, behavioral health, and long-term care settings.Comprehensive knowledge of federal and California state regulations, including CMS and Title 22 dietary requirements.Familiarity with CalCode (California Retail Food Code) and CDPH Environmental Health standards applicable to SNFs.Strong understanding of food service operations, including purchasing, budgeting, inventory control, production systems, and cost management strategies.Strong knowledge of kitchen management, food production systems, and regulatory inspection preparation for dietary services.Strong knowledge of survey processes, regulatory compliance, and quality assurance programs specific to skilled nursing facilities.Knowledge of menu planning, standardized recipes, and nutritional analysis software.Awareness of infection control, sanitation, and food safety standards applicable to healthcare food service operations.Excellent analytical skills with the ability to evaluate clinical and operational data to identify trends, opportunities, and risks.Strong written and verbal communication skills, including the ability to educate and train staff at various levels.Proficiency in electronic medical records (EMR) systems and Microsoft Office Suite (Word, Excel, PowerPoint, Outlook).Skilled in building collaborative relationships with facility teams, leadership, and interdisciplinary clinical staff.Effective time management and organizational skills, with the ability to manage multiple priorities across multiple sites.Demonstrated leadership and coaching skills to influence practice changes and drive performance improvement.Ability to assess and improve kitchen workflow, meal service quality, and dietary staffing competencies.Ability to apply clinical expertise and operational strategies simultaneously to improve outcomes while managing costs.Ability to interpret and apply complex regulations and standards to real-world facility practices.Ability to travel extensively throughout California and work independently with minimal supervision.Ability to adapt quickly to changing priorities and facility needs while maintaining a high level of professionalism.Ability to problem-solve effectively and implement sustainable solutions in both clinical and operational settings.Ability to foster a culture of quality, compliance, and resident-centered care.Education, Experience :
Current Registered Dietitian (RD) license required; must be licensed / certified in California.Minimum of 3–5 years of experience as a Registered Dietitian in a skilled nursing or long-term care setting; regional or multi-site consulting experience preferred.Experience in both clinical nutritional care and food service operations in a healthcare setting including kitchen management, menu development, staff training, budgeting, purchasing, and cost management preferred.This position requires the successful completion of a background check, pre-employment physical, and drug screening as part of the hiring process.The Company is an equal opportunity employer and makes employment decisions on the basis of merit.
