Overview
il Buco Restaurant Group is seeking a dedicated and experienced Assistant General Manager for il Buco al Mare, our elegant, year-round destination in the Hamptons .
The hands-on Assistant General Manager will help lead daily operations and ensure exceptional hospitality at il Buco al Mare. This role focuses on managing the host stand, optimizing reservations, and creating a welcoming guest experience. You’ll also support our café operations, maintain service standards, and contribute to team leadership.

- Support the GM in Daily Service Leadership – Partner with the General Manager to oversee daily FOH operations, maintaining seamless service execution and a warm, professional guest environment.
- Lead Host and & Guest Flow – Oversee the host stand, reservations, and seating to maximize covers while ensuring smooth coordination between the dining room and café. Strategize floor plans and optimize the reservation book to balance guest satisfaction with revenue goals.
- Champion Wine Program – Drive intentional upselling at the table, coach staff on wine pairings, and ensure the program is presented with knowledge and enthusiasm that reflects il Buco’s standards.
- Act as Restaurant Lead in GM’s Absence – Manage FOH and café operations when the General Manager is off-site, ensuring continuity in service, staff leadership, and guest experience.
- Team Training & Development – Support the GM in training, mentoring, and coaching FOH and café staff in il Buco’s hospitality philosophy, service etiquette, and guest engagement best practices.
- Guest Relations & Service Recovery – Be present on the floor during service, engaging with guests and resolving concerns swiftly to reinforce il Buco’s reputation for gracious hospitality.
- Cross-Space Coordination – Collaborate with café leadership and the GM to align staff training, inventory needs, merchandising, and service standards across both café and restaurant.
- Operational Communication – Serve as a critical link between hosts, servers, bar, café, and kitchen teams, ensuring timely communication and execution throughout service.
- Pre- and Post-Service Oversight – Lead pre-shift meetings, review reservations and priorities, and participate in post-service debriefs to reinforce consistency and continuous improvement.
Additional Responsibilities :
Assist with event preparation and support high-volume service periods by coordinating staffing, inventory, and logistics.Support the business development of the commissary bakery, driving new sales and account growth.Help implement merchandising and display strategies to highlight café offerings and increase retail sales.Work with the GM to track financial performance, review sales trends, and identify new opportunities for growth and profitability.Ensure compliance with DOH, OSHA, and labor standards across all FOH and café areas.Required Qualifications
Minimum three years of restaurant management experience in a high volume, upscale to fine dining restaurantValid Food Handler’s CertificationExperience with Toast, Tripleseat, Resy, & Google Suite strongly preferredTeam-focused mindset and empathetic approach to collaborationProficient in all aspects of fine dining serviceKnowledge of food and beverage as well as accounting and administrationEffective style of management, promoting a team atmosphereA positive and enthusiastic attitude, as well as a desire to learn, grow, and developExcellent communication, organizational, and interpersonal skillsAbility to remain calm under pressure and resolve guest conflictWilling to accept guidance in a positive manner and implement the direction in a way that is productive for both you and the teamAbility to demonstrate quick thinking and adaptability in a constantly changing environmentFlexible Schedule : Available to work AM, Evenings, Weekends and HolidaysPreferred Qualifications
Experience working with an extensive beverage program in a sales-focused role : Italian Wine knowledge is a plusProven ability to support all administrative tasks relating to the front of house, including but not limited to financial reports, scheduling, facilities maintenance, and Health Department checksContinued self-education and expansion of beverage and service knowledge, with a proven track record of converting the knowledge into full team trainings for team member education and developmentA proven track record of dependability, a continuous focus on learning and development, and a history of consistently and successfully fulfilling all role responsibilitiesBachelors DegreePhysical Demands
