Our viennoiserie program highlights traditional laminated doughs and seasonal variations rooted in French pastry fundamentals.
Position Overview
We are seeking a skilled and detail-oriented Viennoiserie Maker to join our production team. This role requires hands-on experience with laminated doughs and a deep understanding of fermentation, shaping, and proofing. The ideal candidate is passionate about craftsmanship and thrives in a structured, collaborative kitchen environment.
Responsibilities
Produce, laminate, and shape croissant doughs (plain, chocolate, almond, and seasonal).
Prepare and bake additional viennoiserie items such as kouign-amann, brioche, and buns.
Manage proofing and baking schedules to ensure consistency and timing.
Maintain quality and precision across all products.
Follow production plans, recipes, and sanitation standards.
Collaborate with the pastry team to ensure an efficient and organized workflow.
Assist with preparation and testing of new seasonal or R&D items.
Maintain a clean, organized, and food-safe work area.
Requirements
Minimum 1–2 years of experience working with laminated doughs in a professional bakery or pâtisserie.
Strong knowledge of fermentation, butter incorporation, and dough handling.
Excellent attention to detail and commitment to quality craftsmanship.
Ability to work early mornings and weekends.
Positive attitude, strong work ethic, and ability to collaborate with a team.
Must be able to lift up to 50 lbs and stand for extended periods.
Schedule & Compensation
Full-time position, typically 5 days per week including weekends.
Early morning shifts required (starting around 3–4 AM).
Competitive hourly wage based on experience.
