Overview

Job Summary

The sticker is the process of creating a pattern mark below the brisket of the carcass and severing the carotid artery of the carcass to remove the blood from the circular system of the carcass. The sticker is responsible for ensuring animal is insensible prior to stick, ensuring that the beef is properly secured in the shackle, and humanely and timely sticking the beef to properly bleed the carcass.

Key Responsibilities :

• Open the hide starting at the bottom of jaw through to the base of the brisket, careful not cutting the back of the tongue. This must be a straight cut on the midline.
• Insert knife into base of brisket-neck to cut main artery after the hide is opened.
• Use knife to cut artery vein at a 45-degree angle making sure that the point of knife is not off to either one side or the other.
• Tilt the point of knife back toward the brisket to sever the carotid artery.
• Steel knife and then place knife into sterilizer after each carcass.

Summary

America's Heartland Packing is set to open its doors in early 2025. The 775,000 sq. ft. greenfield project will include a harvest floor, carcass chillers, fabrication area, rendering, further processing area, storage coolers, freezers, and loading docks.
