Position : Director of Food & Beverage
Reports to : General Manager
Supervises : Assistant Managers and service staff
The Club :
- Eagle’s Bluff Country Club opened in 1999
- The Club is a full amenity facility with clubhouse, a championship 18-hole golf courses, tennis, fitness, pool, dining and events.
Job Summary :
Our vision is to be recognized as a premier private country club. This position is responsible for the Club’s dining
services and all food and beverage service throughout the Club. Directly supervises assistant managers, service staff and pool staff. Plans, implements, and monitors departmental budgets. Hires, trains, and supervises subordinates
and applies relevant marketing principles to assure that the wants and needs of the Club Members and guests are consistently exceeded.

Works with Assistant Managers to create an operating budget for each of the department’s revenue outlets;monitors and takes corrective action as necessary to help assure that budgeted sales and cost goals are attained.
Work closely with GM and Executive Chef and Controller on a monthly basis to discuss planning and execution
Responsible for proper charge procedures, guest check analysis, ticket controls, and daily sales reports and analysisManages the department’s long-range staffing needsAssists in recruitment, training, supervision, and termination of food and beverage service staffHelps plan dining service and private event staffing and scheduling plans regularlyAssures that effective orientation and training for new staff and professional development activities for experiencestaff are planned and implemented
Conducts / oversees training programs for food service personnel on various issues including service techniques,knowledge of menu items and daily specials, sanitation, team building and conflict resolution; regularly tests and
evaluates knowledge and understanding of these expectations
Completes annual performance reviews for all direct reports.Assures that all applicable Club policies and procedures are followedHelps plan and approves external and internal marketing and sales promotion activities for the department’s outletsand special club events. Works in coordination with other department heads to ensure consistent standards
resulting in higher member satisfaction.
Establishes quantity and quality output standards for personnel in all positions within the departments. Ensures all legal requirements are consistently followed, including federal, state, or local laws for food safety and the sale / consumption of alcoholic beverages.Ensure all energy management, preventative maintenance and other standards are consistently met.Cultivates relationships with local vendors, distributors, to research new products and evaluate their cost and profit benefits.Greets guests and oversees actual service on a routine basis. Practices Management by being visible.This is done to ensure that one is able to meet and establish a rapport with the members and remain aware of their concerns.
Establishes, updates, and maintains all written standards and procedures for the department as neededAddresses member and guest complaints and advises the Assistant General Manager about appropriate corrective actions taken.Monitors appearance, upkeep and cleanliness of all food and beverage equipment and facilitiesMonitors employee dress codes according to policies and proceduresApproves all product invoices before submitting to the Accounting DepartmentMaintains records of special events, house counts, food covers and daily business volumesEnsures than an accurate reservation system is in place, coordinates member event reservations and diagramsAudits and approves weekly payrollResponsible for inventories : bar, front of house supplies, china, glass, silver and, monitors loss and makes recommendations for budgetingEducation and / or Experience :
Four-year college or university degree in Hospitality Management preferred.Four plus years or more as a Food and Beverage Manager; upscale dining preferred.Licenses and Special Requirements :
Food safety certificationAlcoholic beverage certificationPhysical Demands and Work Environment :
Required to stand for long periods and walk, climb stairs, balance, stoop, kneel, crouch, bend, stretch and twist,reach, crouch, or crawl; talk or hear; and taste or smell.
