Brief Description : We are seeking a reliable and experienced Sous Chef to join our team. As a Sous Chef, you will be responsible for prepping ingredients and cooking meals for our residents. The Sous Chef ensures that excellent quality of food service is provided at all times.
Summary : The Sous Chef is responsible for cooking and preparing food according to recipes and production guidelines while adhering to food safety, food handling, and sanitation procedures. The individual should demonstrate and train on the Culinary Philosophy and Commitments of Restaura Hospitality. The Sous Chef may be responsible for oversight or delegation of responsibilities within the culinary operation in the absence of the Executive Chef.
Key Responsibilities / Daily Operations Management
- Know and understand Restaura's Culinary Standards and Commitments
- Schedule and assign daily work to a culinary brigade and oversee task completion
- Train and guide staff on job duties, proper food safety and sanitation procedures, cooking methods, etc.
- Cook and prepare a variety of food according to production guidelines and recipes
Team Leadership
Train culinary brigade on proper preparation of ingredients by measuring, weighing, mixing, chopping, trimming, and peelingSafely utilize a variety of utensils including knivesOperate equipment such as ovens, stoves, slicers, mixers, etc.Maintain excellent customer service and a positive attitude toward guests, customers, clients, co-workers, etc.Ensure daily communication between day and night shifts regarding items that require additional cooking times and prep for upcoming mealsCommunicate any issues that could affect service before and after each mealSafety And Compliance
Demonstrate appropriate procedures for baking, roasting, broiling, steaming and use various cooking methods for meat, vegetables, and other foodsEnsure the culinary team uses the recipe collection to properly use ranges, garnishes, and portions per guidelinesStore food properly by adhering to safety policies and proceduresClean and sanitize work areas, equipment, and utensilsAdhere to Restaura's safety policies and procedures including proper food safety and sanitationEnsure all components are ready for service; manage meal timing and productionExpedite and adjust food production to match forecasted demand during peak and non-peak timesQuality Assurance
Communicate with management to maintain expected food qualityUnderstand labeling procedures and ensure products are labeled and stored correctlyCook and prepare food according to production guidelines and recipesMaintain knowledge of food products, safety standards, and acceptable qualityEnsure food is prepared to recipe standards with correct portions and temperaturesMaintain a clean, safe, and sanitary workstation; train to operate kitchen equipmentEnsure servers understand correct portions for servingReport safety hazards to management promptlySupervisory Responsibilities
Direct the culinary team, monitor performance, and provide feedback on timing and preparationConsult with management about employee relations or staff scheduling issuesQualifications
Experience as a supervisor in a related role preferredExperience as a cook or in a related role requiredAbility to work independently with limited supervisionProven knowledge of basic food preparation, cooking methods, and food safety regulationsMust obtain food safety certificationBasic math and counting skillsStrong interpersonal and communication skills, both written and verbalOccasional lifting up to 25 lbsServSafe CertifiedCulinary training or degreeEmployment Details
