Overview

Responsible for all of the food and beverage service and production. This position oversees all banquet, dining room and bar staff (approximately 20 in total). Reports to the Assistant General Manager.

Staff

  • Identifies staffing needs, develops hiring strategies and hires qualified candidates.
  • Ensures proper orientation and training for new hires. Incorporates training tips and techniques into daily pre-meal meetings.
  • Manages staff schedules providing coverage where needed while balancing the pressures of meeting labor budgets
  • Motivates employees using various techniques and good manner
  • Disciplines staff up to and including terminations
  • Audits and approve weekly payroll.
  • Stays abreast of and ensures LYC is in compliance with all applicable labor laws
  • Beverage

  • Ensures adherence to applicable TABC laws.
  • Sources best ingredients and best prices from purveyors.
  • Sets pricing of beverage items to meet cost of sale targets, adjusts as needed
  • Offers weekly wine specials
  • Updates wine list monthly or more frequently
  • Pairs wine with food regularly (specials)
  • Oversees development and maintenance of seasonal craft cocktail lists
  • Food

  • Acts as liaison between members / guests and Chef
  • Suggests items for menu or specials driving positive menu changes regularly
  • Ensures proper food handling techniques and sanitation procedures are in place and in effect
  • Oversees that all service and buffet tools are in place, in good repair and being properly used
  • Inventory

  • Orders and checks in delivery of beverage items
  • Approves invoices before submitting to accounting
  • With one other employee, conducts monthly beverage inventories, updates pricing on inventory sheets as necessary
  • Conducts monthly food inventories with Executive Chef.
  • POS

  • Updates menu items as needed
  • Adds / deletes users
  • Utilizes reporting function to provide management with operational statistics
  • Other

  • Ensures that standard operating procedures for revenue and cost control are in place and consistently utilized
  • Participates in weekly management meetings
  • Greets guests and routinely manages the floor staff
  • Keeps records of covers and cover averages
  • Schedules and directs routine extermination services
  • Maintains a current Food Manager's certificate, Food handler's certificate and TABC Certification
  • Maintains CPR and AED certifications
  • Enforces Club policies for members and employees
  • Serves as an ad-hoc member for appropriate club committees as needed
  • Participates in the planning and execution of private and club events
  • Helps with development of marketing materials for club events and food and drink specials
  • Works with other management to establish a budget for departments. Addresses budget variances monthly
  • Conducts periodic inventory counts of glass, china, silver, tables, chairs and linen
  • Reports severe policy infractions and other concerns to Assistant General Manager and / or General Manager
  • Other duties as assigned.

  • Ability to thrive in a high stress environment and accommodate constant event order changes throughout the execution of an event.
  • Strong MS office skills.
  • Ability to operate and update a point of sale (POS) system (knowledge of Jonas Club Software a plus)
  • Ability and willingness to work nights, weekends and holidays.
