= Full Time & Part Time Regular Staff OnlyAs a Lead Cook, you will carry out our Mission of Love by performing in all areas of food preparation. Preparing and serving hot and cold food for all Masonic Village locations. Responsible for overseeing the preparation and cooking of all food items to maintain high quality standards, at the direction of the Sous Chef or Chef, and assist in maintaining proper sanitation throughout all food preparation and storage areas, reporting all discrepancies at that time to the Chef.
Our Lead Cook is responsible for the following :
Responsible for production of daily menu and food preparation for the current and following day's menu.Prepares and serves hot and cold foods and responsible for setting up the service line and or buffet.Able to read, understand and follow standardized recipes and production sheets. Use Production Worksheets to produce forecasted amounts, use recipes for quality and consistency, take and record food temperatures for all food served. Document amount prepared and leftover columns to support the Chef with management and ordering of foods.Check deliveries of the various food and supplies received from vendors. Order product from specified vendors as directed by Chef. Secure and properly rotate stock, using the 3-sticker system.Oversee and instruct maintenance of high standards of sanitation, safety, and care of operating the various types of equipment needed in preparation of meals in support of the Sous Chef and the Chef.Comply with all standards and policies, reporting all discrepancies to the Sous Chef or Chef regarding the kitchen operation by completing an end of day report.Properly cover, label, date, and store all food items in proper container and storage area. Check refrigerator for food items over 72 hours old daily and discard them.Close kitchen as assigned by supervisor, ensuring completion of employees' duties are accomplished and all equipment is turned off prior to leaving their shift.Obtain food supplies from the storeroom or refrigerators. Support organization of storage areas.Contribute creative input towards daily specials and menu creation.What You Have :
Two years of experience in an a la carte line and prep cookingAssociates degree or certificate in culinary arts issued by an accredited culinary or technical school preferred. Equivalent experience may be considered in place of degree or certificate when applicable.Strong knowledge of soups, sauces, and gravies.Good written and oral communication and proficient with computer applications.CPR certification required (prior to or upon employment).We are proud to be an equal opportunity employer.
