This role is pivotal in delivering an exceptional fine dining experience. The Garde Manger is responsible for the preparation and artful presentation of cold dishes, including salads, charcuterie, and appetizers. This position demands a keen eye for detail, refined plating skills, and a strong commitment to quality in a fast-paced, fine dining environment. The Garde Manger works closely with the Executive Chef and culinary team to ensure every dish meets the restaurants high standards and contributes to an exceptional guest experience.

Essential Functions / Major Responsibilities :

• Prepare and plate cold food items, ensuring presentation aligns with restaurant standards.
• Organize and maintain cold kitchen station, ensuring cleanliness and adherence to health and safety standards.
• Assist in creating and implementing seasonal and daily specials for cold dishes.
• Work with Executive Chef to manage food inventory and maintain supply levels.
• Contribute to maintaining a smooth kitchen flow, supporting team members during peak hours.
• Prepare food including cooking main dishes, desserts, appetizers, and snacks.
• Wash, peel, cut, and seed fruits and vegetables to prepare them for consumption.
• Portion, arrange, and garnish food, according to standard portion sizes and recipe specifications based on Executive Chefs guidance.
• Inspect, clean, and maintain food preparation areas, such as equipment and work surfaces, or serving areas to ensure safe and sanitary food-handling practices.
• Ensure the kitchen operation procedures and hygiene; meet food safety standards and sanitation regulations.
• Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.
• Work with servers to ensure orders are completed on time according to requests.

• Strong understanding of basic cooking techniques, kitchen equipment, and food safety procedures.
• Ability to follow recipes and portion guidelines accurately and consistently.
• Ability to communicate effectively with management and staff.
• Ability to work efficiently in a fast-paced and demanding environment.
• Strong attention to detail and commitment to maintaining cleanliness standards.
• Strong organizational and time management skills.

Education and Experience :

• Must be at least (18) years of age.
• Possess a current Food Handlers certification before starting work.
• Minimum of two (2) years experience in kitchen prep and cooking in a fine dining or upscale casual environment.
• Experience cleaning and maintaining a commercial kitchen is a plus.

Work Environment :

• Working during evenings, weekends, and holidays to accommodate peak dining hours.
• Fast-paced environment requiring quick movements and efficiency in tight, confined workspaces.
• Handling and transporting dishware, glassware, and kitchen equipment in wet and sometimes slippery conditions.
• Collaborating with a diverse team of front-of-house and back-of-house staff in a structured yet flexible atmosphere.

Physical Requirements :

• Must be able to stand for periods of up to eight (8) hours.
• Must have the strength and endurance to handle repetitive motions, such as leaning over and bending, and be capable of lifting objects weighing up to fifty (50) pounds. Required to use assistance when available i.e. hand trucks, ramps, or another team member.
• The ability to stand for extended periods and perform physically demanding tasks, including lifting and maneuvering dishes, utensils, pots, and pans.
