Sous Chef :

As our Sous Chef, you assist in managing our professional kitchen. Team up with our Chefs to create outstanding food for breakfast, lunch and / or dinner for our member dining restaurants and outlets. You will focus on using local and sustainable ingredients obtained from our vendors as well as our onsite gardens. Your responsibilities also include writing and managing daily production lists and the execution of these lists. Involved in all aspects of food from sauces, soups, meat fabrication, and knife work. Assist with purchasing and receiving products daily, working with vendors and using their purchasing systems. Lead the cooks during meal periods running the pass, plating and cooking to ensure consistently great food for our members and guests.

Primary Responsibilities :

Assist the Executive Chef and Chef de Cuisine in all aspects of the Restaurant and outlets.

  • Creative menu development for breakfast, lunch and / or dinner.
  • Incorporate local & sustainable ingredients from vendors & onsite garden.
  • Involvement in all aspects of food from sauces, soups, meat fabrication and knife work.
  • Product ordering and receiving.
  • Responsible for management and execution.

  • Writing and managing daily production lists.
  • Lead cooks during meal periods running the pass, plating and cooking to ensure consistent great food.
  • Daily supervision of the culinary team.
  • Each employee of Brackett's Crossing is expected to carry out all reasonable requests by management that the employee is capable of performing.
  • Required Attributes :

  • Must possess strong culinary skills, well organized and physically able to do what is required for this position.
  • Desired Qualifications :

  • 5 years of culinary experience, interest and hands on knowledge with Farm to Table foods, desire & passion to effectively learn and train for the next level of management.
  • Schedule :

  • Full-Time, Exempt, Mid-Level position. Depending on business volume, your flexibility is needed to work days, evenings, weekends and some holidays. Days off are consecutive, unless business needs dictate otherwise.
  • Competitive Wage : $55,000.00 - $58,000.00 & PTO, Approved Dues, Certifications & Education Paid, Uniform (shirt) provided & cleaned
