POSITION SUMMARY
The Director of Outlets develops strategy and provides hands-on leadership for all front-of-house operations for the property's dining venues, which include casual restaurant, sports grill, and quick-service outlets. This position is responsible for driving an exceptional guest experience, operational excellence, and achieving established financial, quality, and service standards.
Reporting to the Director of Food & Beverage, the Assistant Director of Outlets oversees the outlet managers and their teams in developing a culture of accountability, teamwork, efficiency, and improvement in all dining operations.
JOB QUALIFICATIONS
Education & Experience Required :
- Bachelor's degree in Hospitality Management, Business Administration, or related field. A combination of extensive related experience and education may be considered.
- Five (5) - eight (8) years of progressive F&B leadership experience in a multi-outlet, high-volume environment. Casino resort, hotel, or integrated resort experience strongly preferred.
Knowledge & Skills Required
Proven success in managing casual dining, sports bar, and quick-service operations.Strong financial acumen with a track record of achieving revenue and profit goals.Exceptional leadership, communication, and organizational skills. Read, write, and speak English fluently.Comprehensive knowledge of food safety, labor laws, and gaming / hospitality regulations.Proficiency with restaurant and resort management systems (POS, labor management, purchasing / inventory systems), and Microsoft Office Suite.Availability to work flexible hours, including nights, weekends, and holidays.Obtain and maintain a valid gaming license.KEY RESPONSIBILITIES
Operational Leadership
Oversee the daily operations of all dining outlets to ensure smooth execution, consistent service standards, and adherence to brand and regulatory requirements.Partner with the Executive Chef and culinary team to maintain food quality, presentation, and menu innovation aligned with guest expectations and standards.Partner with the Assistant Director of Beverage on strategies to maximize beverage profitability and topline salesDrive continuous improvement through operational audits, guest feedback, and best practices implementation .Financial & Business Management
Develop, manage, and monitor budgets for all outlets, ensuring alignment with the financial objectives.Analyze financial and performance reports, identifying opportunities to optimize revenue, reduce costs, and improve profitability.Oversee inventory management, cost control, labor optimization, and pricing strategies.Ensure accurate forecasting and adherence to financial targets, including labor and cost of goods percentages.Team Development
Directly supervise outlet managers, providing coaching, feedback, and performance management.Develop management strength by identifying and preparing future leaders.Foster collaboration and communication between front-of-house, culinary, and support teams.Promote a positive, professional, and inclusive work environment that supports retention and engagement.Guest Experience & Brand Standards
Lead a guest-first culture across all venues, ensuring seamless, high-quality service in every interaction.Implement comprehensive steps of service training and quality of service assurance.Maintain high visibility in all outlets, engaging with guests and responding promptly to concerns or opportunities.Work with the marketing and promotions team to develop creative programming, seasonal menus, and events that enhance the guest experience and drive traffic.Ensure each outlet reflects Spokane Tribe Resort & Casino's brand identity and service philosophyStrategic Planning & Collaboration
Collaborate with the Director of Food & Beverage, Executive Chef, Banquets, and Beverage leadership to align strategies across all F&B outlets.Contribute to the development of property-wide F&B initiatives, promotions, and special events.Participate in capital planning, renovation, and design discussions for outlet upgrades or new concepts.Stay informed of competitive trends and casino dining innovations to ensure Spokane Tribe Resort & Casino remains a market leader.Compliance & Safety
Ensure compliance with all health, safety, sanitation, and liquor laws.Maintain compliance with Spokane Tribal Gaming Commission regulations.Uphold internal controls, policies, and accountability systems to safeguard assets.Investigate and report any compliance concerns or irregularities to the Director.Other

Operate in a working environment that is subject to varying levels of crowds, noise, and smoke, the severity of which depends on guest volume.Observe and direct actions of subordinates.Stand, walk, and move between outlets for long periods without rest.Climb stairs, stoop, kneel, bend, twist, turn, push, pull, grasp, reach, and grip items, sort, tear, and perform manual dexterity.Lift, push, pull, or move up to 50lbs, with or without assistance.Adapt well to the fast-paced and high-volume casino environment involving large numbers of people with loud and continuously high noise levels and flashing lights.
