Banquet Manager

Summary : Manages and coordinates activities of the banquet service staff to ensure member and guest satisfaction through proper food and beverage service and presentation, while maximizing the Club’s profitability from the catering functions.

Essential Duties and Responsibilities include the following. Other duties may be assigned.

  • Consults with the Catering Director, Banquet Chef and others on such items as serving arrangements, employee staffing and equipment needs for private functions.
  • Interviews, hires, trains and supervises banquet service employees.
  • Attends weekly BEO meetings.
  • Schedules staff based on anticipated guest counts and client needs.
  • Diagrams buffet tables, guest tables and other function room set-up needs for special events.
  • Purchases any special request items for banquet events.
  • Requisitions table linens, china, glassware, silverware and other required equipment.
  • Ensures that proper inventory of all banquet service equipment and supplies are on hand to meet the needs of the event and returned to inventory after the function.
  • Holds pre-function meetings with staff to ensure smooth, efficient service; assigns server stations and coordinates the timing of the courses.
  • Ensures that all banquet staff are well-groomed and in proper uniform.
  • Regularly inspects all front-and-back of the house service areas and equipment to assure that safety, sanitation, and other departmental standards are met.
  • Acts as Head Waiter at special, private functions and may greet and seat guests as necessary.
  • Checks work areas for cleanliness, safety and sanitation.
  • Maintains member and guest satisfaction by handling inquiries, concerns or comments and providing solutions.
  • Compiles a Banquet Summary Report (Captain’s Report) after each function, outlining the event, staffing count, etc. and provides to management for accounting purposes.
  • Assists in preparing annual F&B budget.
  • Manages within budgetary restraint by maintaining effective profit and loss controls and monitoring labor costs.
  • Assists other managers as needed in other Food & Beverage functions including, but not limited to Holiday events, member events and ala carte services.
  • Follows all safety, sanitation, and food handling practices to ensure the maintenance of high-quality standards.

Supervisory Responsibilities : Manages up to 4 Captains and is responsible for the overall direction, coordination, and evaluation of the department. Also, directly supervises 15 to 50 non-supervisory employees. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; addressing complaints and resolving problems.

Qualifications To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. Education and / or Experience : Bachelor's degree (B. A.) from four-year college or university; or two to five years related experience and / or training; or equivalent combination of education and experience.

Language Skills : Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or employees of organization.

Mathematical Skills : Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.

Reasoning Ability : Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.

While performing the duties of this Job, the employee is regularly required to walk and talk or hear. The employee is frequently required to stand and use hands to finger, handle, or feel. The employee is occasionally required to reach with hands and arms; stoop, kneel, crouch, or crawl and taste or smell. The employee must frequently lift and / or move up to 40 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision and depth perception.
