We are seeking a professional CAPTAIN to join Forbes Four Star Restaurant Le B. located in Greenwich Village. Helmed by Chef / Restaurateur Angie Mar, the focus of Restaurant Le B. is continental cuisine for the modern diner. Utilizing classic French technique and both Chinese and Japanese ingredients, the restaurant pays homage to the French classics, whilst displaying modernity and evolution.
As a member of Le B., you will be held to the highest of standards and values; we are committed to providing a ‘journey’ that exceeds expectations. The ideal candidate will have a keen understanding of the fundamentals of French gastronomy, wine and fine dining service standards as well as a professional demeanor and most importantly, the desire to learn and potential for growth in the company. The Captain must possess leadership skills, be personable with guests and be able to anticipate their needs- working with humility, be knowledgeable & noticeably appreciative demeanor; ensuring that guests have a pleasant and memorable dining experience. We believe in a ‘whole house’ mentality and all staff working together as a team to facilitate all food running and table maintenance. We are seeking polished and engaging hospitality professionals to join our team, experience in fine dining is required.
Responsibilities :
- Candidate should provide exceptional service to every guest with a friendly personality
- Establishing yourself as a Role Model and Leader for all staff in the restaurant by being an expert on the food, beverage and service standards
- Teaching and mentoring support staff and holding yourself accountable to company policies and values; possess a natural drive to do well and work together
- Guide guests through their dining experience by describing the cuisine, seamlessly accommodating special requests, allergies and dietary restrictions and enlightening them on unique ingredients, fine wine, spirits and cocktails
- Manage the pace and sequence of the dining experience by appropriate coursing, firing and clearing through proper communication and delegation to your support staff, Sommelier, Bar, Front-of-House managers and the Kitchen of the steps of service
- Enhance company work environment and culture by accepting importance of your role in the restaurant and exploring opportunities by participating in educational sessions to add value to your job accomplishments
- Check tables throughout service times for guest satisfaction and resolve guest complaints when they arise
- Accurately preparing checks and accepting payment
- Maintain a safe, secure, and healthy environment by establishing, following, and enforcing sanitation standards and procedures
- Maintain the high standards of cleanliness and appearance throughout all areas of the restaurant both before, during and after service
- Perform other related duties as assigned
Required Qualifications :
Must have 3 - 4 years experience in a fine dining restaurant - Manhattan experience or Hospitality School requiredBe able to handle a high volume / fine dining environmentA commanding knowledge of food, service, and wineAbility to remain calm and organized in a high-volume environmentKnowledge of POS systemsHave a sincere interest in the hospitality industry; knowledgeable of Industry critics & awards a plusDemonstrate clear written and verbal communication skillsMust be able to take constructive criticisms and work well in a team dynamicCapability to stand for prolonged periods of timeLift up to 50 pounds of weightAbility to reach, bend, stoop, climb up and down stairs, walk, carry multiple objectsMust have full schedule availabilityPlease submit your cover letter and resume.
