Seasonal Part Time - Snapdragon Stadium Lead Cook. Aztec Shops, Ltd. is hiring for this role.
Job Description : Prepares and cooks food, per recipe, for dining, retail, and catering venues as assigned. Also provides supervisory support to general food service production. Assumes responsibilities in absence of Sous Chef.
Responsibilities
- Prepares food products as assigned by production records or submitted orders, following established recipes and standards.
- Ensures product quality by following food handling procedures and sanitation guidelines in accordance with policy.
- Operates, maintains, and cleans grill, kitchen and production equipment in a safe and efficient manner.
- Assists with inventory process accuracy, records spoilage and product transfers, and reports discrepancies to unit manager or supervisor.
- Takes responsibility for cleanliness and orderly appearance of the unit or event, restocks necessary products or supplies, and empties trash receptacles.
- Communicates order needs with purchasing department.
- Works with FOH and Food Preps on daily production.
- Provides culinary staff training including food preps.
- Prepares all food in a timely manner with correct seasoning and appealing presentation.
- Uses basic mathematical skills to understand recipes, measurements, requisition amounts and portion sizes.
- Demonstrates understanding of or willingness to learn classic culinary techniques.
- Sets up, breaks down, works and cleans the various kitchen stations (pantry, broiler, sauté, pasta, expedite).
- Records pre- and post-production quantities for production reports.
- Receives, breaks down, and stores ordered products properly.
- May assist in cleaning equipment, tools, or pans.
- Complies with all company policies and federal, state, and local laws / regulations including safety and health.
- Other duties as assigned.
Minimum Education, Training and Experience
High School diploma or GED required; plus at least one year of experience in a full production kitchen; or equivalent combination of education and experience.Food Handler certificate from County of San Diego preferred.Minimum Qualifications
Language Skills : Must be able to read, write and understand English. Ability to follow verbal and written instructions, guidelines and objectives.Mathematical Skills : Basic math skills; ability to count, add, subtract, multiply, divide; understand conversion charts; multiply recipes based on production needs.Reasoning Ability : Apply common-sense understanding to follow instructions; identify and report deficiencies on invoices or product transfers; identify unusable product and report to Production Chef; utilize leftovers to maximize value.Manual Dexterity : Ability to use a variety of equipment and utensils.Physical Communication : Ability to talk and listen; exchange ideas.Physical Demands : Able to stand / walk for prolonged periods; operate food service equipment; occasionally lift up to 50 pounds.Working Conditions and Hazards
Exposure to food fumes and airborne particles; work near moving parts, hot and humid conditions, and cleaning chemicals; loud, fast-paced environment.Occasional outdoor work in inclement weather; travel between kitchen and stadium areas.Supplemental Information
