Perseid seeks an enthusiastic Lead AM Line Cook to join our growing team. In this role, you
will be collaborating closely with the broader operations team. You will be part of a team
that is passionate about celebrating creativity and delivering exceptional guest
experiences.

Cherif Mbodji, in collaboration with the Bunkhouse and Hyatt teams, Perseid offers a take
on the quintessential neighborhood bistro through the lens of the Gulf Coast, providing a
new destination for travelers and Houstonians to enjoy in the heart of the Montrose
neighborhood. Recently listed as one of the 20 best new restaurants of 2025 by Bon
Appétit. Perseid is the main restaurant of Hotel Saint Augustine, a 71 room Bunkhouse
hotel in the heart of Montrose.

The Role:
The Lead AM Line Cook must have a basic understanding of the kitchen operation within a busy restaurant/hotel. Responsible for producing a consistent, quality product that meets and exceeds the guests' needs in a timely manner. This person has basic skills in department training and can assume department responsibilities in the absence of the Sous Chef. Skills and knowledge to include culinary education, basic cost control understanding, basic communication, leadership skills and computer skills. May assist in monitoring payroll costs & overtime. Responsibilities include supervising hourly AM cooks.
Knowledge, Skills, and Abilities:
·Must be able to start shifts anywhere between 5 AM and 8 AM.
·At least 3 years’ culinary experience is preferred, with breakfast experience required.
·Familiar with a la carte service and health department codes.
·High School diploma or general education degree (GED).
Based upon fluctuating demands of the operation and to exceed customer expectations, it may be necessary to perform a multitude of different functions not specifically related to this position.
