Notes : The ideal candidate will have strong experience as a Corporate Chef in the USA, overseeing multiple high volume restaurants.
Overview :
The Corporate Chef is responsible for implementing and adhering to culinary standards and overseeing the culinary operations across multiple restaurants specialising in French Mediterranean cuisine.
This role requires a leader with extensive experience in Mediterranean cuisine and a proven track record in high-volume and high-standard culinary environments within the USA.
Responsibilities :
- Directly responsible for maintaining and following culinary standards.
- Oversee culinary operations across multiple units.
- Supervise all kitchen functions including food purchasing, preparation, and maintenance of quality standards.
- Ensure sanitation and cleanliness align with DOH standards.
- Assist the Operations Department in achieving their goals
- Collaborate on menu planning and creation across restaurants.
- Innovate and create specials to enhance the guest experience.
- Conduct menu costing and evaluation in coordination with the cost control team.
- Manage recipe development and accuracy, ensuring alignment with operational standards.
- Train operational staff on new dishes and menu launches.
- Audit food quality and recipe adherence regularly.
- Develop standard recipes and techniques to uphold quality and minimise costs.
- Evaluate food products to maintain quality standards and cost efficiency.
- Liaise with Food and Beverage and Operations management to exceed guest expectations.
- Stay updated on the latest F&B market trends and implement accordingly.
- Collaborate with various teams on menu descriptions, food matrix, and sourcing updates.
Requirements / Qualifications :
- Strong experience with French Mediterranean cuisine.
- Proven expertise in multiple, high-volume and high-standard culinary environments.
- Culinary degree (2- or 4-year) required.
- Minimum 10 years of experience in kitchen managerial roles, preferably as Head or Executive Chef.
- Extensive experience in the USA culinary scene.
- Excellent verbal communication and leadership skills.
- Strong attention to detail and organisational abilities.
- Proficiency in computer applications such as Excel and Windows.
- Ability to adapt and thrive in a fast-paced kitchen environment.
