Pastry Cook
Role Description
Reports to : Executive Chef
Supervises food production personnel, assist with the Pastry production tasks as needed and assure that quality and cost standards are consistently attained.
This position is perfect for a steady and career-oriented individual who seeks advancement in the field of a private Club and Resort with the goal of advancing on his career.
Must be personable, energetic and engaging. A strong personal work ethic is required. Outstanding interpersonal skills are required to interact professionally and effectively with members, Guest and staff and can express ideas clearly and precisely in oral and written forms.
Responsibilities and Duties :
- Maintains a neat appearance and a professional manner
- Create an environment for employees that are aligned with the Club / Resort / Hotel culture through constant communication and reinforcement.
- Responsible for the Pastry purchases, inventory, costs and waste.
- Foster trust and cooperation among coworkers, customers and suppliers; develop and sustain personal contact in order to provide mutual benefit.
- Work well in a team environment, train, mentors and motivate the team.

- Maintain product consistency by conducting inspections of seasonings, portion, and appearance of food.
- Coordinates inventory, purchasing, pricing and distribution of Pastries, Desserts and cakes to all the venues.
- Seek to understand the internal / external customer and meet the needs.
- Understands and knows the daily schedule of culinary activities

- Reads, comprehends, and abides by all rules and regulations set forth in the Gasparilla Inn Foodservice Employee Manual and the Gasparilla Inn Employee Handbook
- Must be able to work a flexible schedule, work well under pressure, and meet multiple & sometimes competing deadlines
- Sets up, cleans and maintains stations while practicing exceptional safety, sanitation and organizational skills according to the guidelines.
- Set up for meal periods by ensuring that stations are set up based upon anticipated volumes.
- Handle members and guest requests personally and / or refer as appropriate.
- Demonstrate Club / Resort values when providing service and teamwork.
- Reports safety concerns or mechanical problems with any equipment to the Maintenance department.
- Assists with the cleaning, sanitation, and organization of the kitchen, walk-in coolers and all storage areas
- Ensures the consistent quality of finished food items served to Gasparilla Inn Guests and members.
- Demonstrates teamwork and respect to co-workers at all times
- Performs additional duties and responsibilities as request by the Executive Chef.
Essential Qualifications and Competencies :
- High school diploma or general education degree (GED); one to three years related experience and / or training; or equivalent combination of education and experience.
- A Degree in culinary Pastry arts from a recognized culinary program or related field is highly desired
- At least 5 years of Pastry and Purchasing experience and high-volume restaurant / resort / hotel.
- Past experience in a supervisory role and manage at least 5 Pastry cooks.
- Understands food safety, sanitation and food handling procedures.
- Must have problem solving abilities, be self-motivated and organized
- Strong verbal communication skills
- Even temperament and highly respectful of others and others' abilities
- Must be aligned with the culinary vision and philosophy of The Gasparilla Inn and Club.
- Must be ServSafe certified or able to be certified
- Must be able to adapt to changes in a fast paced, dynamic, and intense work environment
