We’re looking for a Sushi Apprentice / Kitchen Assistant to join our opening team. This is a great opportunity for someone who wants to grow in a professional sushi environment and learn directly under one of New York’s most talented emerging sushi chefs.
About Our Chef
Victor Chen, originally from China and raised in Brooklyn, began his sushi journey at New York Sushi Ko, where he was first introduced to the Edomae tradition. Over the past 15 years, he has worked in both intimate, detail-driven counters and large international hospitality groups, including Kintsugi and Aman Nama. His philosophy blends Edomae fundamentals with restraint, seasonality, and storytelling through sushi.
As part of our team, you’ll be learning directly from Chef Victor, gaining hands-on exposure to the craft and philosophy behind modern Edomae sushi.
