Job Summary Under general supervision and according to established policies and procedures, monitors all of the production procedures and parameters to ensure that established quality, safety and legal standards of food products are maintained. Responsibilities Checks and documents specific data corresponding to assigned product line (crust, topping, USDA). Examines dough temperature for accuracy and ensures that it is recorded by the dough mixer. Checks and documents that the metal detector is correct and recorded by the packer. Monitors the end of the production line to ensure finished product weight and proper identification is printed on product shippers. Conducts product evaluations in the laboratory: baking test and specification parameter evaluations, and texture analysis; records findings on evaluation form. Calibrates thermometer, scales and pH meter daily. Performs microbiology testing for the site; collects swab samples (APC, ATC, Yeast and mold). Keeps lab and test bake areas clean; performs other duties as required by manager. Environmental monitoring of pathogens/surface swabs. Minimum Knowledge, Skills and Abilities High School Diploma or GED. One year of experience in a food service or manufacturing environment. Good oral and written communication skills. Ability to comprehend basic mathematical concepts such as fractions, ratios, temperature tolerances, multiplication and addition. Average computer skills: Microsoft Word, Outlook and Excel. Ability to maintain information in a confidential manner. Preferred Knowledge, Skills and Abilities College coursework in Food Science or related area (American Institute of Baking). Knowledge of Good Manufacturing Practices (GMP’s). Previous experience in food manufacturing and/or laboratory environment. Working Conditions Works in a fast‑paced manufacturing environment and is exposed to potentially high noise levels, abnormal temperatures due to freezer and baking areas.
