Purpose of the Role:
The Chocolate Production Assistant position will be a key team member in our production. This hands-on production role is focused on the detailed execution of molded and enrobed chocolate confections. This position is especially well suited for someone who enjoys meticulous, repetitive craft work and takes satisfaction in consistency, visual precision, and fine finishing.
You will assist in producing decorated bonbons from start to finish, support enrobing projects, and help maintain an organized, thoughtful production environment.
This hourly position offers potential for career growth as our production scales.
Key Responsibilities:
- Scale ingredients and prepare mise en place according to recipes
- Prepare caramels, ganaches and confectionery components independently in an efficient manner
- Wash and polish chocolate molds
- Assist with decorated molded bonbons including shelling, filling, sealing, and unmolding
- Support enrobed confections including preparing ganches and effectively using the automatic enrobing machine
- Follow food safety and sanitation protocols
- Maintain a high quality standard
- Be a team player - we are a small team and the sum is greater than its parts!
Qualifications:
- Experience: A background in confections or pastries, or current enrollment in a culinary program is preferred. Eagerness to learn and develop skills in chocolatiering is essential.
- Skills: Strong attention to detail, ability to follow precise instructions, comfortable with repetitive tasks that require consistency and concentration. Strong piping skills are a plus.
- Qualities: Meticulous. Flexibility in changing priorities and responding to business needs. Willingness to take constructive feedback to grow.
- Attributes: Physical capability to lift 60+ lbs and handle heavy stock pots. Reliable transportation to South Philadelphia.
