Packer — Wholesale Bakery
Out of Thin Air Bread is a high-volume wholesale bakery serving cafés, restaurants, and retail partners across Los Angeles. We make thousands of pastries and bread items each week, and our packing team is the final step that makes sure every order is accurate, organized, and ready to reach the customer.
We are hiring a reliable, detail-oriented Packer to join our early-morning fulfillment team.
Schedule: Wednesday–Sunday, full time
Hours: 3:00 AM–11:30 AM
Location: On site, Los Angeles
Pay: $19/hour during a 30-day probation period, increasing to $20/hour upon successful completion.

About the Role
Packers assemble, verify, and stage daily wholesale orders for delivery. This role is hands-on, fast-paced, and extremely important: every box leaving the bakery represents our quality, accuracy, and relationship with the customer.
You will work closely with the Packing Lead and fulfillment team to ensure products move smoothly from production to delivery. The core of the role is accurate packing, clear route staging, immediate communication around shortages or mistakes, and maintaining an organized workspace.
Key Responsibilities
- Pack pastry, bread, and other wholesale orders accurately according to packing lists and established SOPs.
- Double-check product counts, labels, customer names, special instructions, and route assignments before orders leave the bakery.
- Organize and stage completed orders clearly by delivery route and pickup.
- Communicate shortages, damaged product, missing items, substitutions, or order questions immediately to the Packing Lead.
- Keep packing stations, shelving, carts, coolers, and staging areas clean, organized, and food-safe.
- Handle bakery products with care to protect presentation and product quality.
- Assist with end-of-shift cleanup, organization, and preparation for the following day’s production and packing.
- Work efficiently while maintaining accuracy during high-volume mornings.
- Follow company food-safety, sanitation, labeling, and workplace-safety standards.
- Support the team wherever needed during busy production and fulfillment periods.
What We’re Looking For
- Dependable and consistently on time for a 3:00 AM start.
- Strong attention to detail; you notice when something is missing, mislabeled, or not where it belongs.
- Comfortable working quickly while staying organized and accurate.
- Able to stand, walk, bend, lift, and move throughout an active shift.
- Comfortable working around bakery production, including coolers, racks, carts, and fast-moving morning operations.
- Clear communicator who flags issues early instead of letting them become delivery problems.
- Team-oriented, respectful, and willing to jump in when the operation needs support.
- Prior bakery, restaurant, warehouse, fulfillment, grocery, catering, or production experience is helpful, but we are open to training the right person.
What Success Looks Like
- Orders are packed correctly and double-checked before delivery.
- Routes are staged clearly and consistently.
- Shortages or issues are caught and communicated immediately.
- The packing area stays clean, organized, and ready for the next wave of orders.
- Customers receive the right product, in the right quantity, at the right time.
