Food Service Administrator
The New York City Department of Correction (DOC) is an integral part of the City's evolving criminal justice system, participating in reform initiatives and strategies aimed to move the City towards a smaller jail system without compromising public safety. The DOC is responsible for maintaining a safe and secure environment for our employees, visitors, volunteers, and people in custody. Importantly, safe jails enable DOC to provide people in custody with the tools and opportunities they need to successfully re-enter their communities. The DOC operates facilities and court commands across the five boroughs with more than 7,500 diverse professionals and knowledgeable experts. The Nutritional Services Division is responsible for providing regularly scheduled healthy and nutritional meals to both persons in custody and members of staff within the department. There are currently two production kitchens that operates twenty-four (24) hours a day preparing and delivering meals to all facilities on Rikers Island and several other satellite and court facilities. At minimum, a four to six (4-6) weeks food inventory is on hand at any given time. Under general supervision of the Executive Director with wide latitude for initiative and independent judgment, the selected candidate will work cooperatively with Food Service Managers, Senior Cooks, Cooks, and Dieticians to ensure adherence and appropriateness of menus / diets and be responsible for the oversite of all aspects of Food Service within the Nutritional Services Division. Other supervisory duties include but are not limited to : - Monitors and oversees the preparation / planning of clinically nutritional menus / meals. - Responsible for the storage and processing of acquisition of food products and menu items. - Maintaining familiarity and compliance with standard dietary guidelines. - Oversite of all meal services, equipment, transportation, and alleviating any discrepancies or deficiencies. - Meeting the dietary needs of the persons in custody by ensuring meal services are up to or surpass the standards during preparation and delivery of meals. - Overseeing all facets of food services including the supervision of the Food Service Managers, Senior Cooks, and Cooks as well as others assigned. - Establishing overall program goals and objectives of the Food Services Units. - Conducting performance evaluations and implementing constructive work action plans, to motivate, mentor, and coach staff. Qualifications
1. A baccalaureate degree from an accredited college, with specialization in food service operations, nutrition, dietetics or culinary service and four years of full-time satisfactory experience in such fields, one year of which must have been in a supervisory capacity in a large scale institutional environment; or 2. A four-year high school diploma or its educational equivalent and six years of full-time satisfactory experience in the fields of food service operations, nutrition, dietetics or culinary service, one year of which must have been in a supervisory capacity in a large scale institutional environment; or 3. A satisfactory equivalent combination of education and / or experience equivalent to "1" or "2" above. However, all candidates must have the one year of supervisory experience noted above.
