About the Role
The Bread Jr Manager is a hands-on production leader responsible for executing and supporting daily bread production while serving as a technical anchor on shift.
This role is ideal for an experienced bread baker who deeply understands live sourdough fermentation, baker’s math, and dough behavior, and is ready to step into leadership without fully owning department-wide planning or reporting.
You will work directly on the floor, lead by example, support team flow, and act as the first line of problem-solving when dough, timing, or production conditions shift.

Key Responsibilities Bread Production & Technical Execution

Execute daily bread production from mixing through bake-off

Work confidently with:

Live sourdough starters

Baker’s math (hydration, yield, scaling)

Fermentation timing and dough assessment

Adjust process in real time based on:

Temperature

Humidity

Dough condition

Ensure all bread meets quality, volume, and timing standards
Shift Leadership & Team Support

Act as the lead baker on assigned shifts

Set pace, tone, and flow during early morning production

Support and coach bakers on:

Technique

Flag issues early to the Area Manager (staffing, dough issues, timing risks)
Systems, Cleanliness & Communication

Follow and uphold bread SOPs

Maintain a clean, food-safe workstation and production space

Communicate clearly with:

Help ensure accurate counts and handoffs
Core Requirements (Non-Negotiable)

5 days per week availability

Reliable transportation (early mornings required)
