Overview :
We are seeking a skilled Fish Cutter to join our Bronx operations team. This role focuses on expertly preparing fresh seafood for distribution to Fjord retail locations and wholesale accounts. The Fish Cutter is responsible for processing whole fish into high-quality portions with speed, precision, and consistency, while maintaining the highest standards of food safety and cleanliness. This is a production-oriented role based out of our Bronx facility, supporting the daily supply needs of multiple stores.
Core Responsibilities
- Receive, inspect, and store fresh seafood deliveries according to Fjord’s cold chain standards.
- Break down whole fish into fillets, portions, and specialty cuts as directed by daily production sheets.
- Perform skinning, pin-boning, trimming, and scaling with minimal waste and maximum yield.
- Maintain portion accuracy to specified weights (e.g., ½ lb portions within ±0.1 oz tolerance).
- Execute specialty preparation for specific species (e.g., butterflying branzino, skin-on fillets, custom cuts).
- Maintain workstation cleanliness throughout the shift; perform end-of-shift breakdown and sanitation.
- Adhere strictly to food safety protocols including glove use, knife sanitation, and temperature logging.
- Communicate with the production lead and store managers to prioritize cutting schedules.
- Monitor product quality and immediately report any signs of spoilage or quality concerns.
- Assist with ice packing, labeling, and packing orders for delivery.
- Support other production tasks as needed, including shellfish handling and packing.
Qualifications / Requirements
Required : Previous experience as a fish cutter, fishmonger, or in seafood processing.Proficient with whole fish fabrication, filleting, skin removal, and portioning.Strong knife skills and knowledge of safe handling practices.Ability to work in a refrigerated environment for extended periods.Able to lift up to 50 lbs and stand for the duration of the shift.Reliable, punctual, and able to work in a fast-paced, production-driven setting.Familiarity with a variety of fish and shellfish species preferred.Ability to follow production lists and work both independently and as part of a team.Performance Expectations
