JOB DESCRIPTION
POSITION : Supervisor, Food & Beverage
FLSA : Non-Exempt
REPORTS TO : Restaurant Manager and Assistant Restaurant Manager
SUMMARY : In the absence of the manager and assistant, assume responsibility for the running of a shift in the restaurant. This could include setting up the computers for operation, greeting and seating guests, supervising the wait staff, bus persons, bartenders, serve as a liaison with the kitchen, be responsible for deposit monies and proper set up of dining room for next shift.
P RIMARY RESPONSIBILITIES :
- Set up Micros system for the start of shift
- Program proper menus
- Assign station charts and side work to wait staff and bus persons.
- Ensure proper set up and cleanliness of the restaurant before opening.
- If necessary, set up the bar for service.
- Sign off any requisition for the dining room and bar. Ensure all products are properly stocked.
- Answer telephone and properly book reservations.
- Conduct line up, review projections, specials, service tips, pass along information pertaining to company policies, programs etc.
- Greet cordially and seat customers according to stations to ensure the best service.
- Supervise the floor to handle guest service problems.
- Communicate with the kitchen with regard to surges in business.
- Bus and reset tables when necessary.
- Help instill attitude of team-work with hourly employees.
- Do tip outs, record cover counts, average check, also check and sign all tip reports for correct tip recorded.
- Fill out lost revenue reports.
- Sign off on all void checks with explanation of why check was voided.
- Do deposit carefully and accurately.
- Check all work areas and dinning room for cleanliness and proper set up for the next shift.
- Communicate either written or verbally with the next supervisor about the days events or other pertinent information.
- When appropriate, secure restaurant at end of shift.
- Have a working knowledge of all other food and beverage outlets, their menus and hours of operation, and the resort.
- Assist manager with other duties as necessary for smooth and profitable operation of the department.
- Ensure all employees have properly clocked in and out (using proper Job Transfer Codes as needed).
- Assist Manager with specific office duties (payroll, Covers & Labor reports, etc)
- Execute efficient use / management of company resources.
- Represents management and reports all irregularities to management document all disciplinary action and forward to manager to handle.
- Complete accident / incident reports when necessary.
MINIMUM QUALIFICATIONS :
Basic record-keeping and report-writing including budgets.Outgoing, friendly personality and well-groomed appearance.Ability to direct and supervise staff efficiently.Have the ability to run the dining room in the most professional manner and gain optimal use in order to maximize seating and ensure guest satisfaction.Must be able to perform proper financial procedures in relation to the setup of the computers and balancing of the deposit.Must be thorough and accurate in handling of all cash and credit card transactions.Food and Beverage experience necessary, supervision experience preferred. Have ability to work flexible schedule- weekends, holidays, evenings.Education, Training and Experience Guidelines :
High school diploma OR GED.
LICENSE AND CERTIFICATION REQUIREMENT(S) :
Must possess a valid, unrestricted driver’s license.PHYSICAL DEMANDS AND WORKING ENVIRONMENT :
