If you've already had the pleasure of opening a restaurant, or a few, there's not much I can say here that you'll consider new. All restaurant opening are chaotic, unpredictable, a roller coaster of long days and emotions. There are so many problems that have to be solved for the first time, so many people asking you Qs, most often "do you know where ___ is?"
If you haven't yet opened a restaurant, or haven't done so in a leadership role, yet you feel like that's the next experience you want to have, here's the deal :
You have to be great at hiring, training, guest relations, employee relations, vendor relations, great at creating systems and being flexible, you have to be passionate about what you are doing and simultaneously calm, especially as things near SNAFU status.
