Position Summary
The primary purpose of the Assistant Dietary Manger is to assist the Director of Dietary in planning, organizing, developing and implementing the overall operation of the Dietary Department in accordance with current federal, state, and local standards, guidelines and regulations governing our facility, and as may be directed by the Administrator, to assure that quality nutritional services are provided on a daily basis and that the dietary department is maintained in a clean, safe, and sanitary manner.
Shifts : Vary from 1st shift 5 : 00am-1 : 00pm or 2nd shift 12 : 00pm-8 : 00pm

Job Description
1.
Coordinates dietary services and activities with other related departments (i.e., Nursing, Housekeeping, Social Services, etc.)
2.
Assists the dietary staff in the use of departmental policies, procedures, equipment, supplies, etc.
3.
Ensure that the staff utilizes any special equipment and utensils the resident may need as ordered by the IDT (e.g., plate guard, enlarged silverware handles, etc.)
4.
Help to provide substitute foods of similar nutritive value to residents who refuse foods served
5.
Must be competent in the use of kitchen equipment as well as their maintenance and sanitation. Equipment may include, but is not limited to : Blender, Meat Slicer, Steam Table, Refrigerator / Freezers, Can Opener, Dishwasher, Garbage Disposal, Coffee Maker, Plate Warmer, Toaster, and Oven & Range
6.
Inspects food storage rooms, utility / janitorial closets, etc., for upkeep and supply control & notify Director of Dietary or Maintenance as needed
1.
Assists Director of Dietary Services in facility surveys (inspections) made by authorized government agencies as needed
2.
Interviews residents or family members, as necessary, to obtain diet preferences
3.
Assists in daily counts to ensure lack of over production of food
4.
Visits residents periodically to evaluate the quality of meals served, likes and dislikes, etc. to ensure staff have current preferences
5.
Ensures that residents are offered a nourishing snack at bedtime
6.
Makes daily rounds to assure that dietary personnel are performing required duties and to assure that appropriate dietary procedures are being rendered to meet the needs of the facility (ex : daily chore charts, food temps, etc. are being done daily)
7.
Assist in delivering & collecting meal tickets as necessary to ensure residents are getting a choice in their meals
8.
Perform in other positions when needed, this will include an on-call rotation and adjustment of hours as needed
9.
Assist with keeping food storage area clean & organized (including rotating stock)
10.
Assist with putting away food orders as they arrive
11.
Provide guidance to all cooks & dietary helpers if able or direct to Director of Dietary Services
12.
Aid in preparing in-service training for Dietary employees as needed
13.
Attends mandatory meetings and in-services
14.
Other duties as assigned by the Director of Dietary Services
Qualifications
1.
Must possess, as a minimum, a high school diploma or equivalent
2.
Must have training in food management
3.
Must have food service experience in long-term care
4.
Must be able to read, write, speak, and understand the English language
5.
Must possess the ability to deal tactfully with personnel, residents, family members, visitors, government agencies / personnel and the general public
6.
Must be knowledgeable of dietary practices and procedures as well as the laws, regulations and guid elines governing dietary functions in the long-term care facility
7.
Must possess the ability to seek out new methods and principles and be willing to incorporate them into existing dietary practices
8.
Must possess leadership ability and willingness to work harmoniously with and lead other personnel
9.
Must be prepared to handle emergencies as they come up
10.
Must be prepared to work in more than one position within the department if needed and as necessary
11.
Must be able to relate to and work with ill, disabled, elderly, emotionally upset, and, at times, hostile people within the facility
