Rick Spell and Christy Spell Terry, co-owners of Spell Restaurant Group, own nine establishments six along Floridas 30A Highway and three in Memphis, Tennessee. Utilizing their business backgrounds, Rick and Christy have a unique perspective on how to successfully run some of the most popular restaurants in both markets.
The father-daughter duo first partnered together in 2004, purchasing Brookhaven Pub & Grill in Memphis. The beloved restaurant is now one of the premier sports bars and live music venues in the city. The success of Brookhaven led them to grow SRGs portfolio. In 2015, the pair purchased George's at Alys Beach and LaCo in Seacrest Beach, followed by La Crema Tapas & Chocolate in Rosemary Beach in 2016. A year later, Rick and Christy purchased Edwards in Rosemary Beach. In 2019, the Spells purchased BABALU, which currently has two locations in Memphis. A couple of Inlet Beach eateries Shades Bar & Grill and Shaka Sushi & Cocktail Bar became part of the SRG family in April 2023.
Both Rick and Christy received accounting degrees from the University of Memphis and have been heavily involved with the school and city. Rick was named an Honorary City Councilman for his outstanding contribution to the City of Memphis in 1998. He is a lifetime Ambassador Club member, representing the highest level of financial contributions to the University of Memphis Athletic Department; Tiger Leadership Circle member, Capital Campaign Committee member and Memphis Athletic Foundation president. Outside of his work with the University of Memphis, Rick also serves as a University of Tennessee Health Science Center Advisory Board member.
Christy may now be firmly planted on the Emerald Coast with husband Drew and pups, but their Memphis ties and love for the university take them back often. Christy is a longtime Highland Hundred Football Booster Club member, a Lifetime Alumni member and an Ambassador Club member. Since her move to Florida in 2016, Christy has become the face of the SRG, overseeing daily administration and operations of all restaurants and its nearly 400 employees.
Rick has been married to his wife Sandy for over 50 years, and although they reside in Memphis, they regularly visit the Florida restaurants and enjoy their second home in Paradise by the Sea. When Christy and husband Drew find free time, they enjoy traveling, relaxing with friends at the beach and playing with their dogs.
Job Summary
As an Floating Manager, you'll be involved in all aspects of the business and restaurant operations of several different concepts. This unique position allows you to work in several restaurants each week. Customer satisfaction should be your driving motivation, but you should also be able to assist the GM's with the day to day by utilize P&L statements and other technologies to manage and exceed profit goals. You'll be responsible assisting in sourcing, hiring, coaching and motivating employees while providing a safe and welcoming work environment.
Responsibilities
o Promote, work, and act in a manner consistent with the mission of Spell Restaurant Group
o Ensure that all restaurant policies, procedures, standards, specifications, guidelines, and training programs and followed and completed on a timely basis.
o Achieve company objectives in sales, service, quality, appearance of facility and sanitation and cleanliness through training of employees and creating a positive, productive working environment.
o Monitor food preparation methods, portion sizes, and garnishing and presentation of food to ensure that food is prepared and presented in an acceptable manner.
o Ensure compliance with all federal, state, county and municipal regulations that pertain to health, safety and labor requirements of the restaurant, employees, and guests.
o Control cash and other receipts by adhering to cash handling and reconciliation procedures in accordance with restaurant policies and procedures.
o Investigate and resolve complaints regarding food quality, service, or accommodations.
o Review financial statements, sales or activity reports, or other performance data to measure productivity or goal achievement or to identify areas needing cost reduction or program improvement.
o Schedule and receive food and beverage deliveries, checking delivery contents to verify product quality and quantity.
o Monitor budgets and payroll records, and review financial transactions to ensure that expenditures are authorized and budgeted.
o Establish standards for personnel performance and customer service.
o Be knowledgeable of restaurant policies regarding personnel
o Administer prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures.
o Continually strive to develop staff in all areas of managerial and professional development.
o Review work procedures and operational problems to determine ways to improve service, performance, or safety.
o Source, hire and continually develop team members with training and coaching
o Review menus and analyze recipes to determine labor and overhead costs, and assign prices to menu items.
o Coordinate with and assist fellow employees to meet guests needs and support the operation of the restaurant.
o Fill-in for fellow employees where needed to ensure guest service standards and efficient operations.
