What You’ll Do
Prep and execute all cold-station mise en place (salads, crudos / tartares, composed cold apps, dressings, vinaigrettes, pickles).
Plate during service with speed, precision, and consistent presentation.
Maintain par levels; label, date, and rotate product (FIFO) to HAACP standards.
Keep a spotless, organized station and cold boxes; complete opening / closing checklists.
Communicate with CDC / Sous to ensure timing, quality, and waste control.
Support specials development and seasonal menu changes.
What You Bring
1–2+ years’ experience on Garde Manger (or equivalent fine / casual-fine kitchen experience).
Knife mastery, seasoning instincts, and strong plating aesthetics.
Thorough understanding of food safety (ServSafe a plus).
Calm under pressure; team-first attitude; reliable and punctual.
Ability to lift up to 40 lbs and stand for extended periods.
