What You Will Do :

  • Leading the Pastry cooks and 20-person team to oversee all operational and administrative aspects of the Pastry department.
  • The ability and availability to work late afternoons and evenings.
  • Creating a positive work environment through team building, effective communication and care for our staff.
  • Overseeing the creation, production and execution of bakery, cakes, pastries, Viennoiserie products.
  • Ensuring that all bakery and Viennoiserie items are prepared to proper specifications and standards in a timely manner to meet daily deadlines.
  • Minimizing labor cost through efficient scheduling and monitoring of staff.
  • Maintaining the highest standards of cleanliness and sanitation.
  • Training, coaching and developing staff to achieve our standards of excellence on a consistent basis.
  • Other duties as assigned by management.

What You Will Bring :

  • A minimum of five years of experience as an Executive Pastry Chef in a high-quality bakery.
  • Extensive knowledge in the processes and techniques needed as it pertains to Viennoiserie and bakery production.
  • A self-starter with the ability to build, train and develop a team of pastry cooks.
  • The ability to create, document, institute recipes and any future recipe changes.
  • Bilingual (Spanish) preferred.
  • Knowledge of utilizing deck ovens, proofers, rack ovens and other pastry equipment.
  • A valid manager food handler’s certification.
  • The ability to sit, stand, stoop, reach and walk. Must be able to work extended periods of time on your feet and be able to lift 50 pounds.
  • Good communication skills.
  • Effective time management skills.
