Founded in Sydney, Australia, Toby’s Estate has grown into the world’s most respected names in specialty coffee. Now, we're bringing that same passion for coffee and cafe culture to New York City to expand our story.  Our journey in New York began with a pop-up café in the West Village. Next, we’ll open our flagship Tribeca location and a new café in Soho, with many more to follow as we grow across the city

About the Role

We’re seeking an Area Manager to oversee operations at two Toby’s Estate cafés, ensuring consistent quality, guest experience, and team performance.

As we continue to open new locations over the next couple of months and beyond, this role will evolve into a Multi-Unit Manager position , leading multiple café teams and shaping the operational foundation for our expanding brand.

This is an incredible opportunity for an experienced café manager ready to take the next step in their career and grow with a brand that values both excellence and people.

What You’ll Do

  • Oversee daily operations for two café locations, ensuring top-tier coffee, food, and service quality.
  • Lead, coach, and inspire café teams to deliver exceptional hospitality and uphold brand standards.
  • Analyze sales and operational data to drive performance, improve efficiency, and manage costs.
  • Support hiring, training, and team development in partnership with HR and senior leadership.
  • Maintain compliance with all health, safety, and sanitation standards.
  • Collaborate with marketing, training, and supply chain teams on promotions, launches, and process improvements.
  • Assist with new café openings — recruiting, training, and setting up teams for success.
  • Grow into a Multi-Unit Manager role , taking on additional locations as they open and helping to shape the future of Toby’s Estate Café operations.

What We’re Looking For

  • 3+ years of café management experience (multi-unit experience a plus).
  • Proven leadership and people development skills — you know how to build culture and coach performance.
  • Strong financial acumen with experience in labor management, cost control, and P&L oversight.
  • Excellent communication, problem-solving, and organizational skills.
  • A passion for specialty coffee, hospitality, and operational excellence.
  • Willingness to travel locally between cafés and work a flexible schedule that includes weekends.
