Xuntos, "together" in Gallego, is a Tapas Bar from Chef Sandra Cordero in the heart of Downtown Santa Monica. Xuntos is the sophomore bar & restaurant from Chef Cordero, whose beloved Gasolina Cafe in Woodland Hills was a Valley favorite for a decade. A love letter to summers in Spain & the joy of dining (& working) in restaurants, Cordero designed Xuntos to be both romantic & unrefined, where you can sit down at a cozy corner booth & eat with your hands, or stand up at the bar & give a toast.
The menu opens with specialities you won’t find anywhere else in LA : hand-cut jamón ibérico by the ounce & huge Galician-style empanadas. It continues with a rotating selection of pintxos (bar bites), seasonal seafood like razor clams & percebes (gooseneck barnacles), & a wide-ranging menu of tapas inspired by the farmer's market & the iconic dishes of Galicia, Catalunya & San Sebastian, prepared & served as in Spain. For lunch, bocadillos (sandwiches) crowd the table.. There are many new things to try & to share, with service anchored in Spanish hospitality : generosity, warmth, abundance & pride.
XUNTOS is hiring a Sous Chef. We’re looking a candidate with enthusiastic energy, a sense of urgency, & welcoming hospitality. You must be comfortable working as a team in a collaborative manner.
As a Sous Chef, your primary responsibility will be to ensure the menu is executed with care and consistency, by bringing structure and accountability to daily operations.
Your responsibilities :

Ensure that all food and products are consistently prepared and served according to the recipes, portioning, cooking & serving standards of XUNTOS.
Check the line and prep, with tasting at the beginning & throughout each shift. Ensure all back of house (BOH) consistently use prep, cleaning & station checklists to maintain organization & accountability.
Responsible for daily ordering. Enforce standards for all incoming deliveries, ensuring that products are correct, high quality & delivered on time. Shop for produce at the Santa Monica Farmer’s Market weekly. Conduct weekly inventory counts & continuously update the count list with current pricing from vendors.
Conduct regular inspections of work stations, storage areas & kitchen equipment; inform the General Manager when service is needed.
Review & approve daily BOH timesheets to ensure accuracy & compliance with labor policies. Assist in managing labor costs by adjusting staffing levels to align with business volume & budget targets.
Demonstrate an attitude of teamwork by working collaboratively with peers to identify positive solutions to problems or issues. Be open and receptive to changing needs & priorities of your team.
Work collaboratively to achieve company objectives in sales, service, quality, appearance of facility, sanitation & cleanliness through training of employees and creating a positive, productive working environment.
Actively participate in weekly leadership meetings to align on kitchen performance, staffing & operational goals. Review product mix (PMIX) & cost of goods sold (COGS) reports prior to meetings to contribute to data-driven discussions.
Ensure consistent, thorough, and timely communication to peers, managers & vendors.
Ensure that all guests are receiving the highest level of service & hospitality.
Lead, train, & continuously coach all BOH employees, including dishwashers, prep cooks & line cooks. Address performance issues constructively & support ongoing staff development to maintain a high-performing kitchen team.
Fill in where needed to ensure the guest experience is never compromised as a result of operational challenges, including, but not limited to, working a station & general duties.
Fully understand and comply with all federal, state, county & municipal regulations that pertain to health, safety and labor requirements of the restaurant, employees & guests.

Must be able to multitask and manage in high volume and high-stress environments.

Proficiency with Google Workspace.
Physical Requirements :
Must have manual dexterity to use and operate all necessary equipment.
Must be able to reach, bend, stoop, and stretch. Can frequently lift up to 30 pounds, occasionally lift up to 50 pounds, as well as work in a standing position for long periods of time (up to 10 hours), moving intermittently.
This is a role that requires physical stamina : carrying food up and down stairs, and maintaining an energized presence on the line during multiple hours of service.
