What This Role Is
You’re not just managing production, you’re helping shape the NYC expression of a global cultural brand. As Bakery Manager, you’ll lead doughnut production with surgical precision, steward kitchen excellence, and work in rhythm with FOH to deliver memorable experiences every day.
This is a player-coach role . You’re someone who can maintain top tier doughnuts and roll out systems. You’ll own quality, flow, training, and consistency and be trusted with helping scale excellence without losing soul .
✦ Your Day Might Look Like :
Leading team huddles, dialing in daily production, and reviewing performance
Making batter, frying, glazing, and innovating side-by-side with your team
Managing BOH & FOH cohesion, checklists, cleanliness, and kitchen flow
Training new hires and upskilling the team on quality, efficiency, and brand standards
Collaborating with HQ and creatives on seasonal features and limited-time glazes
Controlling food and labor costs through smart ordering, prep, and scheduling
Making micro-adjustments to process and product that compound into macro excellence

What You Bring
3+ years of bakery, pastry or dough-based production experience (doughnut-specific a plus, but not required)
2+ years of team leadership or kitchen management experience
Strong grasp of inventory, waste control, labor tracking, and quality assurance
Clear communication, calm under pressure, and creative problem-solving
Hands-on leadership, this is not a clipboard role
A desire to collaborate with a world-class brand team, creatives, and culinary talent
A love of precision, consistency, and making beautiful, delicious things
