Assembles and distributes meals to residents / patients and visitors according to resident / patient selections and following proper safety and sanitation practices.

Also distributes resident / patient nourishment, washes pots, and performs related kitchen duties. All assignments are made in the best interest of Keswick Multi-Care Center and the residents / patients.

ESSENTIAL JOB DUTIES

Set Up and Preparation : Previews menus and work orders to determine the type of food and supplies required for assigned tray line station, to include starter station, hot food, beverage, special food and dessert.

Prepares station items such as beverages and wrapped rolls. Stocks and prepares station for upcoming service.

Tray Line Production : Reads meal tickets. Uses proper utensils to place correct station item on tray according to plan for plating presentation, portion size, quality, temperature and appearance of food.

Requests steam table replenishment from Cook.

Food Handling : Complies with established sanitation standards, personal hygiene and health standards. Follows proper food preparation and handling techniques.

Ensures that food items are maintained at appropriate temperatures. At end of service period, wraps, labels, dates and properly stores all food ingredients according to safe food handling techniques and practices.

  • Daily Cleaning and Sanitation : Maintains clean and organized food service areas using "clean as you go" method. Wipes down work areas daily including steam table, tray line, counters, carts, trucks and other areas.
  • Pots. Washes and sanitizes pots and pans, equipment and utensils. Empties trash throughout the shift.
  • Truck Delivery and Retrieval : Delivers trucks with assembled trays to units on schedule. Notifies nursing staff of food arrival.

Assists unit staff with distribution of trays. Retrieves trucks, carts and bussing carts from units.

Service Ware Cleaning : Buses returned trays, separating out garbage and recyclables. Prepares dishes for dish machine;

loads dish machine and starts cycle. Disposes of trash. Unloads clean service ware; stores clean items in proper locations.

  • Nourishment : Coordinates between-meal nourishments. Reads nourishment tickets. Prepares and delivers formula and special nourishments to unit pantries according to schedule.
  • Weekly Cleaning and Equipment Maintenance : Cleans and sanitizes floors, walls, hood filters, baseboards and other food preparation, storage and service areas.

Maintains kitchen equipment; reports malfunctioning equipment; maintains a safe work environment.

Accountability : Maintains records of tray deliveries. Minimizes waste of food and supplies. Follows policies and procedures for incident and accident prevention.

11. Performs other duties as assigned.

WORK ORIENTATION & EXPERIENCE REQUIRED :

Six months experience in healthcare food service or related field preferred.

PHYSICAL REQUIREMENTS & ENVIRONMENT / WORKING CONDITIONS :

Work is performed in a food preparation setting and involves standing and walking for extended periods of time. Bends, stoops, lifts, carries objects up to 50 pounds constantly throughout the work day;

pushes cart weighing up to 75 pounds. Adheres to established protocol for lifting objects. Constant need for reaching with the hands or arms, and use of hands to finger, handle or feel.

Requires ability to talk, hear and smell. Requires close vision, distance vision, depth perception, color vision and ability to adjust focus.

Frequent exposure to high noise levels near dish machines and equipment.

May be required to work weekends, holidays, evenings and / or nights, and during emergent situations such as extreme weather conditions or disasters.

May experience stress associated with multiple demands and time constraints.

Work requires frequent trips into a healthcare setting. Little or no risk of exposure to body fluids, infectious waste, or blood borne disease.

Frequent exposure to toxic or caustic cleaning products. Employees will be instructed in the proper use of personal protective equipment and specific protocol if assigned duties where they may be at risk.
