Overview :

La Monique, a French Riviera–inspired fine dining restaurant, is seeking an experienced Dining Room Captain to lead by example in delivering refined, elegant, and personalized service. The ideal candidate is confident, poised, and deeply knowledgeable in wine and food, with a passion for creating memorable guest experiences.

Key Responsibilities :

Supervise and coordinate service within the assigned dining section, ensuring seamless collaboration between servers, runners, and support staff.

Deliver an elevated dining experience with grace and composure, maintaining La Monique’s standards of excellence and hospitality.

Confidently present and describe menu items, ingredients, and preparation methods; provide informed recommendations tailored to guest preferences.

Demonstrate expert wine knowledge, assisting guests with pairings and guiding the wine service with precision and confidence.

Execute and oversee tableside presentations and service, including flambés, carving, and specialty dishes.

Monitor pacing of courses, guest satisfaction, and dining room flow to ensure exceptional timing and service continuity.

Take guest orders directly when required, ensuring accuracy and special requests are properly communicated to kitchen and bar teams.

Support service team training and uphold the highest standards of appearance, professionalism, and discretion.

Maintain strong communication with the culinary and management teams regarding menu updates, specials, and guest feedback.

Qualifications :

Minimum 3 years’ experience in a fine dining or luxury hotel restaurant environment, preferably as Captain, Head Waiter, or Supervisor.

Strong command of wine knowledge and tableside service.

Fluent in English; French or Spanish a plus.

Polished communication skills, elegant demeanor, and a natural sense of hospitality.

Ability to lead by example and remain calm under pressure.
