The Drayton Hotel is seeking a positive, creative and organized individual with a hands-on, lead by example approach, who has a high level pastry and bread baking production, comfortable working early mornings and managing a team.
The Role
As part of the culinary management team, the Pastry Sous Chef, you will have other culinary accountability including; collaborate with Executive Chef on menu development, manage pastry and baking production, oversee set up of breakfast line and expedite AM services.
Responsibilities
Culinary - You will work with the Executive Chef to develop menus, manage pastry production, oversee execution of menus, prep teams, and service standards.
Organizational and Budgeting - Create, manage, and continuously improve financial performance, purchasing and deliveries, labor costs, and resources to balance team and guest experiences.
Learning and Development - Coaches and trains culinary team menus and presentation. Aligns culinary team to hotel values and culture.
Implements programs to recognize and reward team and personal and professional growth.
